I so agree that a roadmap would be good - not super detailed schedule, not over-committing, but giving the players an idea what to expect. For example to me it seemed that what they were saying was there would be smaller, more frequent updates INSTEAD of major themed updates? Of course 1.22 will come, but the way I read it it seemed like 1.22 would be the same sort of scale of "smaller, more frequent", as 1.21.7 would be. So clarification would be great!

Have you two played terraria recently? If yes what features from terraria you would like to have in Minecraft. If not, you should try it at least once. It has a lot of revolutionary features I think would fit in and take minecraft to next level. Eg: Having a hard mode that basically resets the game halfway through, microbiomes, etc

Pixlriffs has mentioned ideas from Terraria at various points during the podcast episodes. I reckon he has played it a decent amount. As for the hardmode suggestion, that would be quite different from normal Minecraft. It would probably have to be a completely separate mode or minigame which is not normally something they do, so it might as well be a mod. Minecraft worlds are 3D and also practically infinite (X and Z), so that changes a lot of things. Mojang also don't want to have big things just happen on their own independently of the player. But I do think they can explore "larger player-induced changes to parts of the world", like a smaller-scale version of the "hardmode V". It would still have to keep with the "one block at a time" guideline, but it could be something inspired by the clentaminator's functionality. Again, Mojang is very insistent on ensuring players don't irreversibly alter their builds and other work in case that ruins hard-work. Microbiomes are also a very exciting idea. Terraria has some beautifully crafted microbiomes with fun details and mechanics, like the Shimmer, spider nests, and marble and granite biomes. Minecraft already seems to be inching towards that with dripstone and lush caves and the deep dark. I see Terraria as a fun and eventful experience that just kinda throws all its ideas at you and doesn't take itself too seriously. On the other hand, Minecraft is like a fine experience where only the few most fitting ideas are kept, but digging into it reveals incredible depth (pun unintended). And yes, I agree with William and Riuphane; if you really need your input to be seen by Joel & Jonny (JoJo, is that a-), it's better sent as an e-mail.
