I don't think they did spend a night at a hotel together. I think just Ste did because Brendan says at 3:19 "I was hoping you would be there too" - doesn't sound like they'd seen each other between.

@Sophieepie Yes but its hollyoaks they always put in twists, plus in a interview about the fire it says Ste loses and Brendan feels guilty...Plus theres that other dude who threatened tony aswell....
