Tom, I found you a while back while looking for a PID upgrade for my older camp chef woodwind pellet grill. I ordered the one from Smoke Daddy after watching your video and it was everything you said it was! Thank you for that! I’ve been wanting a larger cooker and your previous videos of this unit convinced me to call them up last week and pre-order the latest model. What a great company to do business with! I ordered their ash remover with it as well. I told them I purchased the unit because of you and your videos of it. Can’t wait to get it and start cooking! Your reviews are top notch! Please keep up the great work!

Nicely done. Sweet smoker. I wish that was around 25 years ago when I was catering and having big gatherings for my kids birthdays. That crispy fat cap is the best part!

Looked like the temps on your thermometers had pretty big differences top to bottom? And I've read that these smokers don't get a good smoke flavor or ring

There can be differences from top to bottom, you are correct. The top 3 shelves seem to be the most consistent. The circulation fan does help to even things out. As far as smoke and a smoke ring it is a pellet grill, you should expect the smoke to be light to medium as you would get with most pellet grills

Tom, I do the same when making pulled pork, I season at the end also. I just did 32 pounds for a deacon from our church for his grand daughters baptism. Nice looking butts Tom !
