First video for the Food Prep, Planning and Preservation for the May/June for the 8 week grocery haul worth of food!
There's always an order that things need to be done in, and greens and tomatoes are regularly way up there, so that's this couple of days project!

Now that I am older, I couldn't even think of doing what you do to provide for your family. I would slice a few tomatoes and call it quits. You are one of the unique Mothers Nyssa. A lot of Moms out there feed their kids processed foods all the time. Kudos to you!

I have the time to do it as well, which is something not everyone has, I know I made the sacrifice to live out here and to live on lower income and things like that to be able to do it, but again, I had that choice, things worked out in a way that allowed for this process all to work for me, and I'm grateful! :D

Budget cooking, canning, preserving, making grocery shopping budget stretch,creative cooking on a budget, homesteading on a tight budget, feeding a large family frugally, how to use up those great grocery clearance finds. These get a lot of clicks on US videos. I hope it helps. Love your video's. Off grid in the US isn't as big of a draw as you would think. It has been cost prohibitive for most people. I am glad that I came across your channel. I found your channel during seed starting last year, and have stayed to learn new recipes, and get ideas to change up our menu plan. At 62, I remember when I was feeding 5 of us on a shoestring and I stayed busy all of the time as well. Sweet memories.

A little tip, if you add more tags, such as recipes, homesteading, Australia, food prep, canning, etc etc, you will find you will get more audiences find your channel!

I have just figured out what DITL stands for! Duh! I love your what i eat in a week ish! My favourite! If you use the words budget, frugal, offgrid, those sort of catch words appeal to me! Thats how i found youas well as a farmers wife in New Zealand

Congrats on hitting 12K subscribers! I love seeing your channel grow because you put so much work into your videos. I know I feel like I fall behind on things when my process is too complicated - I hope you can streamline/simplify your process so you don't end up feeling pressed that it takes a long time. Maybe sometimes you can speak while you are working, even if for a few minutes, would save voiceover time.

I have been looking at getting one of the rode mics that I clip on, it would theoretically mean I could talk sometimes while doing stuff and not get as much outside noise happening! But my kitchen is a noisy place lol, and it might make editing even more difficult to not only have to watch the video but listen to the audio in case there’s something I need to include! I think the best thing is to get our patio done and then I can have a table and chair on the opposite side of the house to the kids etc and potentially voiceover with the video running in front of me rather than making it a whole other process! I’ll get there eventually lol

@@OurSmallFootprintI believe lots of mics have strong directional capability so using them should cut off (I.e. not capture) most/all background noise. But having another reason to get your new space finished is good too! 🤣

Great video, a small suggestion would be "budget" or "healthy home cooking" word added into your title. With the crazy prices of food at the moment the way you cook and prepare meals is very savvy and budget conscious. We are a large family and although we don't shop every 6 weeks, every week you have inspired me to cook in a way that I'm not wasting anything. I stumbled across your videos after watching home steading/off grid life and budget friendly cooking. Cheers Nyssa!

Really good idea re. adding the word “budget” to your titles, particularly in these straitened times when people are constantly looking to save money your way of cooking and using up everything is very budget-conscious. Also, maybe add something like “fresh food” or “bulk buys” so that people know you’re not just opening a tin of chicken soup and calling it a sauce!

yes you can freeze veg but they need to be chopped tiny(in a vacume bag) , your amazing what you do and achieve, total inspiration xxx

Yeah, I did a bag or two in the small pieces without blanching, just frozen, in the vacuum bag, we'll compare and see how it goes hehe :D

Could you do a second layer of the wee salsa jars in the steam canner? I don't know anything about canning so that might be a mad suggestion!!

If I could get a rack to fit, yes! You can’t stack them directly on top of each other but if you have a rack to distribute the weight appropriately, though I’ll have to check if there’s enough height :)

I think they are a super awesome resource so long as you use them appropriately, I know a lot of people have them and lose stuff down the bottom lol, but I make sure to inventory and rotate regularly! I still occasionally find something I forgot lol

@OurSmallFootprint Now that we are off grid I am using it so much more especially as I feed my 2 dogs raw food so storing 2-4 weeks worth of raw dog mince in my fridge/freezer I had no room for any human food 🤣

@@MzGrimz lol, yes! That would take up some room! I only really store chicken wings or cheap raw bones for the dogs, they mostly eat the cooked mix I make and kibble, not the best, but one of those things!

I don’t know about frying off the beans and broccoli to have with the chicken. Something I wouldn’t serve. I understand more Ghee came out than you wanted. Great to have all those beans and broccoli vacuum sealed.

I will try and do more of them, at the beginning of the cycle the food we eat is so intertwined with the prep that they just can't work as standalone, but once the main prep is done etc, they're easier to film just the meals!

It's so good, and if I can get thighs cheap from woolworths like I've been told then we'll be having it more often. It's moist and yet crunchy and very flavourful being a thigh cut! but you definitely don't need quite as much fat/ghee as I had lol, I should have used a spoon in the jar instead of pouring it!

I LOVE my Tupperware fridge savers. Yours looks like the newer design then mine. For a small household they are a huge help too. I got the fridge magnet with mine that shows the vent guide. If I could add a photo in YT comments I would to help. Great video as always

oooh, there's a magnet, I might chase it down, or there's prob an image I could just print lol! I have a whole lot of them, but I can't find the bases to the rest, the lids were in the pantry but not the base, so as I said, I reckon they've been taken inside to catch drips lol.

I would try for like this video titling it off grid large family food haul prep. I say this because off grid, large family, food haul seem to trigger the rhythm and when I seen the title of this one I was like do I won’t to watch canning tomatoes. You can use a hair straightener to seal the bags on one end! You just run it from one end to another

hehe, no hair straighteners here! but they also use a lot of power because of the heating element, the Aldi one will do a seal too, but the chamber sealer does like this double width seal! which is awesome, just awkward!

We secured the floors and the trim in the second room yesterday, but realistically they've been move in able for a while the rooms themselves, but we haven't finished the last wall on the breezeway, part of the issue was trying to find a cheap fireplace for putting there and the fact that we have to have a specific material on that wall if the fireplace goes there that is heat resistant! There's some well priced fibro with almost a wood grain effect in Brisbane, so James is going to grab some for me and come for another trip to help us do all the final touches, we also have some vinyl plank flooring for our room that we got free through James so he's going to install that too, and we thought it best not to put our bed in there until we did the floors, just for ease of access lol, its been a slow process hasn't it!

Maybe you can label them May 2024 Large grocery haul - Cook out/up ep. 1 (2,3,4,5,6 etc) That way it has the large grocery haul name in it. Maybe put large grocery haul may 2024 - cook out so the key words are first.

An I was gonna suggest nu blanchIng stuff an than laying it out on sheet trays a flash freeze an bag it up an freeze. But it seems like u have a way too.❤😂🎉

Hi Nyssa, what a wonderful lot of greens you have processed, I hope the unbalanced vegetables are great , because blanching is a pain in the butt , I always just flash freeze ...works for me..The chicken you made what did you rub on the skin to get it so crunchy? Maybe I missed that bit.. anyway catch you on the next video.. super busy yesterday so a day late watching...

me too, it would make things much easier lol! I just sprinkled it with salt, that's all! and then left it to cook for a nice long amount of time in that ghee (though a little less ghee/oil than whats shown in the pan, that was a glug error lol...)

Love how open you are and inviting feedback. I squeed when I realized you had a TM and cheered when you announced being a consultant! Would you consider some TM-themed recipes that you use but also notice you do freestyle with it ave learned heaps from your channel including some practical hacks just by seeing how you do things. Question about the oil spritzer you use, I bought a similar one (under $10 from the supermarket) but they never seem to spray as well as yours - they lose their oomph after two sprays. Where did you get it and does it keep going? Love your work, Nyssa.

It is a decor brand and is from coles/woolworths, but, I must say, I bought a new one with this haul because it was half price and I wanted a second one so I could get my main one cleaned out really well and dried and be able to do that regularly, and it does not 'spray' anywhere near as well as my first one, which is also decor, but is quite a few years old!

They have slowed right down, probably the cooler weather, I'm also making the kids go and collect eggs multiple times a day, the chooks are slowing down with the weather too, so we're still not getting huge amounts, but I don't feel like I have to stop using them either anymore!

I remember grandma used to put papertowel in the bottom of the veggy container to keep them fresher so try that next time in one container like your non- blanching method... Good to see you using the stalks of broc wood be nice to put all together in one packet for a bake with potatoes...😮😮😮 Did U do a winter garden this year...😊😊

I rarely have paper towel lol, I buy it sometimes for things like this, but the kids and D find other things to use it for and it feels wasteful lol! I need a hiding spot for paper towel, how sad is that lol! In most meals we would use 500g of each plus potatoes for a meal, so can still do that! I was contemplating par cooking some potatoes and trying them frozen too, because we do find they tend to start growing, which is fine, we just cut bits off, before we get through them all! Very very minimally, I'm still working on it, its still warm enough during the days that I could get quite a few things established if I get moving!

Hi from NSW love your videos thank you for all that you do to get them to us. I am thinking about starting to do some canning starting with Water bath canning first. I have a question for you if you can help me I have some salsa jars and was going to buy some new lids for them are they ok to water bath onion jam in water bath canner? Oh and can I water bath can home made chicken stock. Thanks again.

Hi Wendy! The salsa jars are fine for the onion jam, I really like the wide mouths on them for scooping out! :). Chicken stock needs to be pressure canned, it’s a quick canning time but due to the low acidity the guidelines by authorised entities state it needs to be pressure canned. There are ‘rebel/amish’ methods for water bath canning low acid products, which generally involves water bathing for 2-3+ hours. I, personally haven’t used those methods as I find a pressure canner easier, it uses less water and in most cases less time for the ‘same’ result. So I can’t give you any advice on those methods but if you do some googling it will explain the science etc :D

The broccoli and green beans looked so good vacuum packed. Your salsa looked great too. So how long does it take for you to go through all those salsa jars? Glad to see another video!!

We go through them fairly quickly, but it is normally a later in the month thing, but say we cook nachos for dinner, we'll use that salsa and we might end up using 3/4 jars depending on whether its a main or a side! The kids easily go through a jar just as a snack with some corn chips too. I did can it in larger jars initially but we ended up with some wastage, because they'd open a jar pour some out and have a snack then the jar would go in the fridge and be forgotten about, so it means more lids used but less waste to do it in the smaller size

Maybe to support your income avenue put in a pop up link to the thermo site...no idea how you add the thumbnail? Popup? in the vid but I have seen others that have it. Or a little walk through on how to order online and make sure you get your credit.?

Thermomix prefers that you do things as one on one as possible :D. So I try and stick to that and actually have face to face (text to text lol) conversations with people before they go ahead and order, just so that I've got that rapport with them!

@@OurSmallFootprint maybe made a pitch snippet you can add to the end of all your vids. People can skip it if not interested without missing your content. Or does that affect your view count? If so add it in just after your greeting

A Thermomix is a thermal cooker, so it has the ability to work as a food processor or a cooker, so the white machine with the silver jug I use all the time :)

Hehe, we have our phones on prepaid aldi, which is telstra lines, but they rarely ever actually ring when people call lol... but we have starlink internet, we used to have skymesh, but it was hopeless and very very expensive, so whilst Starlink was a bit of an outlay to get, it was well worth it!

Not really, no :D I soak my dried beans before cooking them, but for green beans, meh, we don't eat them in huge swathes, and the levels in them is much lower than in mature beans, everything has something in it :)
