No Gluten No Whey (Jill Glessner)

Welcome to my kitchen! Having dietary restrictions shouldn’t mean missing out. I have been gluten free for 15 years and dairy free for 7 years. I also avoid corn and yeast. We have four beautiful daughters who have each delt with a wide variety of food sensitivities over the years. In addition to no gluten and no dairy we have also avoided eggs, soy, cashews, sugar, carbs and meat. The main lesson I have learned is adaptability. I love cooking and preparing good food for my family and friends. Cooking is chemistry, my goal is to remove the mystery from chemistry! I invite you along to share my food journey to find tasty, safe food that makes you say “No gluten? No whey!”
Salad Dressings
Caesar Dressing
1 cup mayonnaise
1 tsp mustard
2 TBS Vinegar
1 TBS Worcestershire sauce
4 cloves garlic
½ tsp black pepper
½ tsp salt
Place all ingredients in blender and blend until smooth. I use a smoothie cup on my VitaMix and blend to the count of 20.
Croutons
4 slices gluten free bread diced
1 tsp onion powder
1 tsp garlic powder
½ tsp dried parsley
½ tsp dried basil
¼ tsp salt
2 TBS melted non-dairy butter
1 TBS olive or avocado oil
Place bread and seasonings in a Ziplock bag and shake to coat. Combine melted butter and oil and pour over bread and seasoning mixture, shake to coat. Pour onto baking sheet lined with parchment paper and spread bread cubes out so that they are not touching. Bake in 350 degree oven approximately 30 minutes, stirring every 10 minutes until golden brown.
Ranch Dressing
1 cup Mayonnaise
3 tsp vinegar
4 cloves garlic (about 2 tsp garlic powder)
1/4 cup fresh parsley chopped (about 2 TBS dried)
2 TBS fresh basil chopped (about 1 tsp dried)
3 green onions chopped (about 1 tsp dried chives and 1 tsp onion powder)
½ tsp salt
Place all ingredients in a food processor and pulse until combined (about 10 pulses).
Honey Mustard
1 cup mayonnaise
2 tsp mustard
½ tsp onion powder
2 tsp vinegar (or Rice Wine Vinegar for Oriental dressing)
1 TBS honey
Place all ingredients in a container with an airtight lid and shake until combine.
Chipotle Vinaigrette
¼ cup Red Wine Vinegar
¾ cup oil of choice
¼ cup honey
4 cloves garlic
1 tsp oregano
½ tsp salt
¼ tsp black pepper
¼ tsp chipotle pepper
2 TBS ketchup
Place all ingredients in blender and blend until combined.
