We challenged chefs of three different skill levels - an amateur, a home cook, and a professional - to make us a roast chicken. After each of them had presented their creation, we asked a food scientist to review their work. Who can boast the best roast? Whose bird is the word? A-well, a bird, bird, bird...

He's not even really lazy. I WAY prefer cooking poultry in pieces rather than whole. Normally I just buy the bird whole then break it apart myself but. In my opinion more steps doesnt automatically mean better. Lvl 1>lvl2

Every legend, Greek or Roman, happens to say, No one hates dishwashing more than Jay, Using ziplock bags, every day. But it’s honestly convenient, Cooking’s very lenient, Personally, I think that it’s okay. Plastic might be wasteful, But it makes the food more tasteful, Compressing flavours of all kind, Making them combine and bind. He just strives for simplicity, In The Insomniac City, Not worrying about politics and that nitty-gritty. He likes it easy-peasy, No zesting a lemon-squeezy, It’s oddly peace-y, don’t you agree wi’ me? While his actions aren’t sublime, At the same time, They’re not really crimes, At least he isn’t walking with his name. (And now, his habits have somehow reached fame.) x2

Especially because he concentrates his effort on the best part of the bird: those tasty, crispy, juicy thighs are so much better than the oh-so-lean-but-often-dry chest. I give credit to the use of butter and a steaming filling to the others, though. But the only competition for thighs in the taste department are wings.

@@TheCobraCom on a really beautifully roasted chicken the breast is just as good as the thighs. But it takes a really talented cook to pull that off. The Zuni roast chicken recipe, if executed perfectly, yields an asbolutely delicious breast.

@@methyod Technically you are absolutely right, my friend. But the risk getting not perfectly prepared meat is (from my experience) is not so small and the impact on the quality of the food so great that I normally don't risk it. Additionally thighs win always in the crispy-spicey skin competition, because of more skin ;-)

Indeed... competent and his recipe does look good. It is unfortunate he promotes being irresponsible environmentally with the single use plastic bags. Why not just mixing the veggies directly on the baking sheet? Would be more responsible as well as time and cost efficient.

I advocate for a better environment, but tbh, legit the plastic bags are already made. So it honestly doesn't matter what you do with it even if its single use. As long as he throws it away it doesn't even matter. Whats the point of plastic bags if you're never gonna use them.

There are 2 solutions to Jay's use of plastic bags: 1. selective recycling; 2. using classic dishes. No.2 creates other probelms, however, because dishes have to be washed. With Detergents. Which can be as harmful to the environment as plastics are.

What this level 1 did was still pretty basic. Thighs are a lot easier than a whole chicken and minimal work on the veggies and marinade. Easy can still be good.

Can we PLEASE have more sciency Level 4 discussions on cooking?? I am SO grateful to have Rose explain the science behind the cooking because the truth is, cooking food is pretty much chemistry. While I love watching the 3 levels of cooking, we regular people who are not professional chefs but still need to cook for ourselves and our families every single day could really benefit from the actual methodologies of cooking. Grandma Beth is just lovely, she cooks everything with so much love and passion. I'd take her roast chicken over the level 3 crap any day of the week, she's a true legend.

Honestly, the food expert really explained a lot on this one. I was confused when the level 3 chef didn't put anything in the cavity of the chicken while the level 2 chef did. The expert then explained that doing so won't actually affect the flavor much but only enhances the aroma. Ugh i love this series so much.

@@miot22 Yes, same reason people say "first we feast with our eyes" and the reason they have a "plating" section on the show. To make the food look good enhances your enjoyment of eating, and to make your house smell good gives you anticipation, THE HYPE.

@@miot22 thats why when i do my chicken the garlic is without its outer layer, but together with the other vegis below the bird. Another differance we at home always liked sauce with our chicken, so we include some water and vegi fond, only to slightly cover the vegis so they still brown. Instead of the parsnip though we go with celery. That then can be served with either rice, potatos or prefered with bavarian dumplings. EDIT: when the chicken is done the sauce still needs some doing though. But the fond from the chicken plus the vegi fond are a perfect base for that. Partly a few of the vegis will be sieved, but most are served as they are.

That's a biased judgment against level 3s. Chefs have a lot of love and respect for their food. I don't know if it's this channel or elsewhere where someone took loaves by chefs and turned them into soup bowls, the chefs were emotional, some even teared up. I would think most of them love what they do as well and want that to be presented in their food

I think that's the point. That no matter how bad you are at cooking or how good someone else is in comparison to you, your food can still be good and you can enjoy it. It doesn't have to be a 3-Michelin star restaurant quality.

It’s all you need if you let it rest for a day before cooking. A good quality chicken stands pretty much by itself. Those grocery store factory farm chickens are tasteless and make you use a lot of extras to make it palatable

@@andrewthezeppo No way. The way she seasoned underneath the chicken itself would mean a lot flavorful chicken. She also let the seasonings sit overnight so the chicken would absorb more of it. Also, those croutons would be simply delicious because of the maillard browning reaction. Her dish was simple but highly effective for what she was trying to do.

The best thing about Costco chicken is they are big and cheap. I use them for all kinds of things: enchiladas, chicken and dumplings, salad, casseroles, and dakjuk/congee.
