These fried rice recipes are a-ma-zing. Emily's fried rice is the kind you make as a broke college student (I certainly have made that one). Lorenzo's version is the type you make on a Sunday family breakfast (reminds me of home with my parents and sibs). King's is the ultimate one, the kind you get at hotels and fancy restos (of course since he's a level III).

1. emily fried rice is the most basic version of fried rice, just light soy sauce, & protein . sometimes we just don't want to exaggerate the fried rice with a tonne of ingredients. it should be simple and quick cooking in the early morning breakfast so that why we have leftover cold rice as our main ingredients. 2. Lorenzo, I'm lost with the combination of a lot of ingredients down there.

My mom taught me how to cook fried rice like King’s since a kid. The important thing when frying rice is the order in which the ingredients go in your pan. Try not overload your fried rice with too many ingredients and keep the frying order like King did and it will work out great.

@array s I actually believe you've gotten it wrong. It's (in order first to last) oil, ginger/garlic, chilli, onions, meat, veggies & rice. Adding ginger, garlic, chilli and/or onions first kinda "flavours" the oil which then enters the meat.

@array s I'm Asian (Malaysian specifically) too and I think we should all just agree that everybody has different cooking methods LOL It ALL depends on your family, what you learnt on your own, your own trials and errors, AND PREFERENCES!! I put onions, a little salt, and I add lots of garlic (they're roughly diced so they have some size and won't get burnt too fast) when the onions are translucent so they won't get burnt. Before the garlic gets brown, I add the sliced/small cubed meat, season a little, the vege, season a little, then the rice, knobs on butter + bottled minced garlic on the edges, some soy sauce and sesame oil too. Once it's all mixed together I'll adjust to taste with more soy sauce or black pepper if I need to. If I feel like it I'll make a well in the middle and add some eggs and slowly scramble it into the rice. Once the rice is out, I fry a sunny side up egg (basted so the yolk is gooey, not runny) to top on the rice. Personally, I put Japanese mayo and my fav Linghams sweet chilli on it all. Also some baby gem lettuce on the side for some crunch if I want to. Sometimes I kind of use the baby gem lettuce as a scoop to put the rice on and eat it k-bbq style lol, preferences!! I love a savoury, garlicky, black peppery, and a slightly buttery fried rice. I go crazy on black pepper and garlic. I think the most important thing is to not overcrowd the pan so everything can be cooked evenly. Of course that's no issue if you got a nice big wok. NOBODY I know adds egg and meat first, but you know what, it's obviously different in your home, and that's just what YOU do. Preferences!! I know some people who don't even use garlic, but garlic powder. Honestly, sometimes I use both because I love garlic that much.

@array s I understand that each family has their own ways of cooking and your method is completely fine. But I have to agree that people tend to put aromatics like garlic and onion in first before the meat. I personally agree with Lightning Cat. You're not gonna burn them because the juice from the meat will come out and slows down the burning process. The aromatics flavors are very subtle but is a hallmark to asian food. That's why our grandparents have been washing/marinating meat with ginger or garlic or any of that sort. As a chemical engineer, I also have to add that the aromatics added in first aid in forming the burnt toasty meaty flavor and that yellowish brown that covers the meat (that is not burnt food that's Maillard reaction)

Peter Pan surprisingly King’s recipe is much simpler than Lorenzo’s. Lorenzo’s kinda looks like a vegetable stir fry with SOME rice, rather than actual fried rice.

Lorenzo is trying too hard and, honestly, it's holding him back. That dish needed at least three of those vegetables taken out or scaled back. He precooked his egg for literally no reason (pointless garnish? Who garnishes with omelette bits?). He has these hunking great slabs of sausage and yet fails to render the flavour of the fat into the pan. And, most egregiously, his pan was a crowded mess by the end. Great knife skills, though

Eggs are complex and there's like 5 ways you can mess up cooking them, so I get that. Gordon Ramsay uses scrambled eggs as basically a litmus test to see whether someone actually knows how to cook or not.

The beauty of making fried rice actually come from using the leftover rice from yesterday and mix it with anything you have in your fridge Edit: lv3 chef is actually the closest one to the authentic asian home and streetfood fried rice

Lorenzo's fried rice is a mess. In fact I think Emily's might come out better. Fried rice is supposed to be dry. He added too many veggies adding too much liquid. It needs a little bit of the smoky (toasty) flavor as the lvl 3 chef did. Lorenzo needs to go back and ask his mom.

Why doesn’t the “scientist” explain that if your pan is too full you’re basically steaming your fried rice, instead of frying it. The smaller the amount the better. One to two portions max.

Yeah - it's annoying, this is the most common home-cook mistake with fried rice. It still tastes fine (rice is good and all), but you're missing out on the signature taste of *fried* rice. A that point, you're just eating cooked rice with stuff in it. Lorenzo should have dumped his GIANT bowl of vegetables in a side bowl, kicked that sucker on a higher heat, fried the rice, then mixed it all back in. Same dish but would've tasted 10x better.

this... almost all non asian "fired rice" video just show how to assemble the materials and it is freaking packed up in the pan - like the babish basic fired rice video which the final product still have some lump of rice in it. Cooking fried rice sounds simple but it is actually a very technical dependent dish. the motion of flipping the wok and the heat is all that matters to make every single bit of rice not stick to each other. Chinese chief usually separate yolk from the egg, and fry separately then drop rice last, whereas south-east asian chief usually drop eggs into the pan after rice. Chinese chief also LOVE very high temperature to fry rice, not achievable using electrical pan. Totally different results, but I like both.

I don't like putting salt in my fried rice when there's much better salty sauces and seasonings that can really boost the flavor(soy, fish, and oyster sauce)
