Foof50 you can use chopsticks as well, and they do it in japan too, but then you have to hold it perfectly, it’s hard to hold it the way you should in japan, but use your hands mostly

I worked in a "fast food" sushi place and got trained by a professional chef because the franchise was opening up and I was extremely surprised to discover that they taught me most things Chef Hideyo did for her recipe. They also taught me how to respect the sushi, which is super important too ❤️

i love imitation crab. If I weren't restrained by my sense of propriety and the potential judgement from someone catching me in the act, id buy a pound of it and eat it all in one sitting, straight out of the bag like an animal. Lol I'm the same way. I'm from Maryland so I grew up eating the the real deal and I absolutely love it. But my gram started buying this seafood salad from the grocery store that reminded me how much I legit enjoy the fake stuff, too. I'll just buy packs of plain fake crab sometimes because it's good and cheap and easily available. I myself am a bit of a crab snob tho so I don't really evem think of it as crab, just an adult fish stick, and there's nothing wrong with that!

Hideyo's ratios really separate her from Lorenzo's level. Lorenzo packed the flavor in with extra steps but over stuffed the roll and crushed the rice. Hideyo used half the ingredients but utilized them in full with a perfect rice-to-filling ratio and fluffy rice.

@Bryce Douglas Nonsense. Have you actually watched how the level 3 chefs typically produce their meals? No expert level sushi chef is going to pick powdered wasabi (which isn't even wasabi) over fresh wasabi. The only reason one chooses powdered is because it is cheap and easy, but if you're making high quality food cheap and easy are rarely the best. Expert sushi should have fresh wasabi, there's no excuse.

Agreed. Literally everything lines up to make this woman a perfect teacher. She's patient, explains herself very well, and is clearly enjoying sharing. And, at least for me, her accent is just thick enough that I have to completely focus on her directions; I can't just halfway pay attention. Of all the chefs I've seen on this series, she is the one I think I would enjoy a day in the kitchen with the most.

everybody is talking about the level 3 chef, but they somehow found a level 1 chef THAT CAN MAKE SUSHI without buying it

John is deceptively good, especially by level 1 standards. He was in one the recent recipe swap with Frank--something even someone like Lorenzo found challenging. He seemed to do a good job, too. He reminds me a bit of Beth in the sense that he's someone that's hanging on the upper end of his Level and could potentially make a jump some day.

To people wondering, no Lorenzo most likely isnt an ecletic culinary god. The guy is an actor who went in the "food influencer" business and thats why Epicurious hired him to do the episodes. He most likely is a very talented cook but he's probably performing the Epicurious episodes based off on a script made by the producers, not spontaneously and some of the recipes are not "his own" like claimed on the episodes.
