That incline railway is no joke! The way up was so scary to my daughter she almost passed out! I think the other passengers were pretty freaked out too because when it slowed down at the top of the mountain, you could’ve heard a pin drop. The view was so beautiful though!

I feel the same about turkey bacon. But what I do is chop it up they also have turkey sausage. In Michigan we have Kroger's and they sale Turkey Sausage. So this is my recipe 1/2 Cup Turkey Sausage and 2 or 3 pieces of Turkey Bacon Chopped and Mushrooms and Onions and Cheddar Cheese and Salt and Pepper to taste. And about 6 eggs and add a little milk probably 2 Tablespoons. It should feed 2 or 3 people. Or any veggies you like.

I use yellow onions and green bell peppers in my cooking all the time. I have fresh on hand as well as a quart-sized freezer Ziploc bag to store both chopped up onions and green peppers. It's so easy to do and doesn't take up very much space in your freezer. Give it a try.

Hi Mel!!There's something about the warmer weather that makes me want lighter, more healthy meals. These are perfect. The lettuce wraps look so good! I've never made a frittata but I do make quiche, which I love, but boy your frittata looks so yummy. The chicken and tortellini looks so pretty with the colorful veggies. The Godshall brand precooked turkey bacon is the best I have found. It actually gets crispy. I have bought the one you cook yourself and I can’t get it crispy for some reason.
