I want to say Thank You….My adult Son is Autistic…And we both watch your cooking instruction videos…..He loves the recipes and he learned how to make the Hobo Packs…. He loves to make them for family and friends….He feels so proud of himself and has gained confidence that he can cook….And we will make other recipes together too…I’m trying to help him to learn that he can cook more than a frozen pizza, ramen, and boxed mac and cheese. Love your recipes and you! Such a dear woman! I just fixed the Hawaiian BBQ Chicken. It was super simple to make which is ALWAYS a plus and Delicious! I partially cooked the chicken in a frying pan with olive oil after salting and peppering before combining it with the veggies as I am kind of paranoid about raw chicken. Not necessary but makes me feel better and it was still very tender in the end. Like you mentioned, a person can add whatever veggies they like to the mix. I would like to try it with mushrooms next time and maybe sliced water chestnuts and the tender tops of asparagus. I like spicy so squirted some Sriracha Chili Sauce on it before eating. Very tasty! Thank You Soooo Much! I will be trying the other recipes. 🙂
