Question ? After crumb coating , does it go back in Fridge or is it ready to decorate?

I always set the cake back in the fridge for 15 - 20 minutes to let the crumb coat firm up. Then it’s ready to ice and decorate.

do you ever make your cakes ahead of time and freeze? how long ahead of time?

Hi - No, I never freeze. The earliest I bake for a Saturday cake pick up is that Tuesday before. Provided you wrap the layers individually in Saran Wrap and keep them refrigerated, they will be delicious on Saturday. Typically I do this schedule for cakes due on Saturday: I will bake on Wednesday, wrap the layers and let them sit in the fridge overnight. Thursday I decorate. I have Friday as a finish up day if I didn’t get done on Thursday or if I’ve taken a lot of orders. When I did wedding cakes, I baked on Tuesday, leveled, filled and crumb coated on Wednesday. Thursday and Friday I decorated. All of my customers say they eat on the cakes even the Monday and Tuesday following the event. So if you don’t over bake, keep wrapped and use the refrigerator, cakes are delicious for about a week. Hope this helps!! Any other questions, don’t hesitate to ask! Lisa
