Thank you! I made macarons for the first time yesterday and they browned. I used the convection setting (out of habit). I will try lowering the temp next time, or conventional setting. Thanks!!!

Thank you so much for this video I just bought a convection oven but it has different settings my Macs came out perfect and full but did brown on top so I will not use convection next time and see how they come out. I was wondering why my oven thermometer was reading about 50 degrees above my set temperature.

Hi, Lala. It's actually normal for ovens to vary in temperature. That's why I always emphasize to double check the true oven temp with an oven thermometer and not rely on what oven tells you. For convection, make sure to lower the temp by 25°. So if you're baking on convection setting, preheat the oven to 275°F.

Hi! I could use some help. My heat source is coming from the back of the oven. It's a gas oven. The brand is Blue Star. How can I prevent browning in this case?

Hi @shinee, I had tried lower the temperatures and adding a pan above, it’s less browning but the feet was being compromised. What should I do?

I'm assuming you're talking about filled macarons. Typically, wet fillings, like cream cheese filling, jams and jelly, soften macarons more. Watch this video on maturing macarons for tips on preventing this issue: kzbin.info/www/bejne/qIqVh6iuiriFe9E

Good day! I use oven no fan and I bake the macarons at 275°F but in 5 minutes or less the top is browning, I didn't use any gel food color . How can I do?

I use up and down heat sometimes bottom heat but in 5 minutes or less the macarons is browning or toasted

Do you have an oven thermometer? Or do you rely on your oven settings only? If you don't have an oven thermometer, I highly recommend getting one to check the accuracy of the oven temp. It's most likely your oven runs too high and the only way to know is to double-check with a separate thermometer.

@@jilwinparungao9868 So, your separate oven thermometer that you placed inside your oven says the oven temp is 275F and your macarons are browning within 5min? That doesn’t sound right. I’d try another oven thermometer to triple check, because if your macarons brown within 5min, your oven temperature is way too high (definitely not 275F). And you’re sure you’re setting the temperature to 275 degrees Fahrenheit not Celcius, right?

Hi, there! You must be in a humid climate. Check out this video on my suggestion for humid climates: kzbin.info/www/bejne/e4vMdWZqr5x5iJY Or look into no-rest macaron recipes. I don't have a recipe for it.
