I really liked the Guga-esque tasting with all 3 of you at the end. I'd love to see more of that in future videos, but with more than just steak. Love the videos...I watch and enjoy every single episode, and keep a working list of dishes to try!

FYI, you're being a little too aggressive removing the pelicos, aka the bark, you can cut closer. OR, you can eat it too, which is pretty intense and I love it. It's amazing ground in burgers too.

From what I know of, it allows Guga to control the way the steak ages.

I'd be skeptical about a bag for dry aging. I would imagine you would want the moisture to dissipate no?

@@markusallport1276 it’s a “special membrane” according to Guga/the producer. He’s had standard dry age and says it compares well to it.

@@markusallport1276 it’s a membrane that allows the moisture to escape and no bacteria to go in it’s less of a real dry age do to the lack of exposure and control but it’s the safest and closest thing to the real thing that you could do at home in your regular fridge along your other thing without cross contaminating something

I watched a dry age video where the whole room was built with huge blocks of pink Himalayan salt that obsorbed humity and gave a natural salty flavor to the finished meat. I wonder if lining your dry age unit with a few smaller blocks would elevate the taste experience.

I don't always comment as I watch most of your videos through my Fire stick in Mexico. I just wanted to say you inspire me to make new things all of the time. I'm looking forward to trying to make "The Mrs' Favorite Chicken with Pita". I've made the "Chicken Pot Pie so easy" many times. But the hit right now is the Last Minute Arrachera since I am in Vallarta. That marinade is great on shrimp as well, just sayin'.

Love the videos Sam. Just wondering if you would do a video on using spices and spice mixes (like Italian Seasoning, Herbs De Provence, Adobo....)? Too many people don't comprehend how much food/ taste can be enhanced by spices and seasoning.

Yea, it amazes me still at 60 yrs old how few spices and herbs ppl I know don't use or even try!! My 11 yr old grandson made his own hot sauce w his other grandma, and it's great!!! ( I didn't ask what was in it,lol) my daughter used to get SO mad at me when he was little cause I would put him on a stool and let him go through my spice cabinets and try everything lol. But hey, he is NOT a picky eater like most kids!!!

After we trim ours we season with salt, pepper and garlic and then vacuum. They then go in the freezer to cook (sous vide) when we want steak. And we put in frozen at 135F for a couple of hours and sear on the Big Green Egg

How do store the rest of the meat when you're done dry aging it? Do you cut it up, vacuum seal, put in freezer? Or leave the meat uncut and put in freezer?
