Well he didn’t actually dry age the beef. He wet aged it. You can tell because wet aging doesn’t bring the same funk that dry aging does.

Adds a different flavor to the meat. The steak taste stronger. Over the course of 60 days the meat loses about 2 pounds of weight and becomes more compressed which gives it a more tender feel. It really breaks apart off the fork. To be very honest steaks are better with the bone.

It makes it more tender because it gives it a chance for the muscle fibres to relax. Dry aging means aging while not submerged in anything while wet aging is where you might use a brine or other liquid mix around the meat in the aging period.

I dry aged a prime rib purchased a few days before last Christmas for 30 days and am now aging it in butter for the next 30 days to get the best of both techniques. Gonna finish it off in my Traeger smoker next month sometime after Valentine's Day. Watching this video has my mouth watering in anticipation of the treat that waits ahead.

The Danish chef who does this puts the beef cut in the fridge for 4 days to allow it to start the dry age process. I have tried this and it works very well. It gives that dry aged flavor, and it also recovers the meat on the outside that was dried and normally would be trimmed on a fully dry aged steak. The outside becomes re-moisturized and does not need trimming.

The steak covered in butter is NOT dry-aged. It's sealed in butter. There's no drying at all, except maybe a little if there were any gaps in the butter. You've basically wet-aged it. You've preserved it, in the way that many foods can be preserved by being encased in fat. There are fat-based cooking techniques - confit for example. But they require heat. You basically prevented it from aging and fed yourself an old steak.

I was in a steak restaurant in the US 20 years ago, where fries died in oil are the only vegan option. They could not cook fries to save their life. No two fries were cooked the same. "Is this Vegan friendly?" mother of the aspiring young vegan in the table next to me referring to the steaks that the waiter was passing with. "Yes,". and Pauses."The cow did not eat meat" was the best answer I heard in an American Democrat city by a Most probably a Republican waiter. Reply from the young child Vegan, "How do you know that, how about bugs?". "On my family farm, the cow did not like the flies and walks on bugs. Do you eat food you walk on?" asked the waiter "No" said the kid. "You got your answer." Some people are incredibly dumb. He then delivered it to two tables behind me who order it. I nearly choked on my steak on the first question, when he relied to the mother was pointing to the steak on the plate. There was nothing else on the plate.

Love your videos man😇 You should try unsalted butter to see if the steaks keep most of its moisture. I would think that because of the salt in the butter, osmosis will pull out some of the juices from the steak

For real... He always infuriates me bc he makes a pig out of himself meanwhile here is guga buying $200 steaks to try out an experiment and he just gobbles it. It's like this everytime he is on. Plus he knew about the experiment bc he told on himself saying that he seen the butter experiment already in the fridge and the whole time guga is trying to guide him into saying the real dry age is better and the only steak angel keeps on eating repeatedly is the one they are trying to say is inferior lol
