I heard the same story about pretzels: it was made by a choirmaster or a priest teaching his students and made the arms crossed over the chest to reward his students for being quiet. Also, cloissonne actually originates from enamel metalworks but was then transferred to gemstone cutting.

I'm going back a bit to my art history in early christian and bysantine art, but if I remember correctly, it was high art for royalty with the celts. Was sent with cut stones. Many years before enaemel was in the west. Could be remembering wrong. I had an amazing teacher in this. A Dr. Hann.

Just looked it up on Wikipedia. 6-9th century celts, gemstones. Earlier with glass (enamal) in Rome, but even earlier in Asia. mind you nether of these were covered by a degree in Christian arts. :)

now that you're in a new location, do you think you could show us the whole process, as in cooking the sugar and such. I think you mentioned in a live stream that you couldn't do that in the old location because the room was too steamy and it would break the camera. By the way, have tried using oil based food coloring for the hard candy so that you don't have to worry about making sure all the water is boiled out? I know they make food coloring specifically for candy.

Sam appears to just shape and leave on the cooling table but with long run candy you break up it is often said in the image candy videos that the candy is kept moving to avoid a flat side . How is this avoided with the candy cane or is this why you appear to be spending a bit more time on the cooler side of the heated table prior to cutting each cane (to allow the candy to cool slightly over standard image candy)
