If you burned a food that is high in fiber in the bomb calorimeter, wouldn't you get a number that is much higher than the nutritionally useful calories? Because cellulose doesn't provide calories that the body can use, but it does combust in a fire. I wonder how they would account for this.

Bomb calorimeters can and have been used to test cellulose - if we humans evolved to digest cellulose and wood fiber we could get 3000+ kcal/mol from it :)
