Julia, we just moved from AZ to Missouri. Your cookbook was the only one I didn’t pack and brought with me in the car! I was a flight attendant for many years and we always loved to get green chili chicken soup in the ABQ airport. Back then you couldn’t get green chilies anywhere but New Mexico. Hey Julia, I made your crockpot beef Stroganoff recipe yesterday for Sunday's dinner and my wife and I was completely and utterly blown away by it's flavor. Your Mini Me is totally adorable! And the taquitos do really well in an air fryer. Spray the outside with either avocado or grapeseed oil. Start with 10 minutes at 400. Check about 5 to 7 minutes in.

Using warmed enchilada sauce to soften the tortillas is genius! I’ve only ever seen it done using oil. I don’t want the added fat. I usually assemble it lasagna style. My husband prefers rolled enchiladas. This will be a good compromise for us. Thanks!

Pro tip for the Alfredo sauce: it will deglaze easier if you add the chicken broth first, right after you cook the chicken. The cool broth on the hot pan will lift up those brown bits much easier than the cream will.
