So timely, with the cold weather in Florida. ***If any of you are holding back on getting the cookbook, seriously get it. Along with the great, easy recipes you expect, there are couple extra gems: The substitution section has selections I haven't found in other books and the index has smart sectioning -- for instance, the cookbook has a category titled "Super Quick Dinners" but within the index is also a section titled "30 Minutes or Less" which pulls recipes from all the categories that may be prepared in under 30 minutes. It's just gold!!

These soups look delicious, I can’t wait to try them! Here’s a tip for those who either don’t have a proper working stove or live in dorms where you can’t have one, use a rice cooker for these recipes instead. I have stove in my apartment but it’s really awful and the burner choices are: mild simmer or volcanic lava. So I use my rice cooker for pretty much everything these days. The rice cookers are cheap (you can even find them in thrift stores) or try Kmart etc. There is virtually no clean up and if you’re really desperate you can eat straight out of the inner bowl.

I use a crockpot so that I don't have to babysit it once I throw everything in it. I have also used an Instant Pot which has many functions, like a rice cooker, crockpot, etc. Not just the use as a pressure cooker. Although the last soup I made (beef barley), it was so good, I made two pots (crockpot and Instant Pot) and it lasted a whole week for my family. Pro tip. I started to separate the ingredient chunks (i.e. potatoes, barley) from the liquid soup to store in my refrigerator because the next day, I have found that all my liquid (soup) had absorbed, leaving me "mush". Now, I take out two containers from the fridge and add my "goodies" (hard ingredient chunks) and my container of liquid soup into my serving bowl! 👍

Love the Italian bread from Walmart I buy two unsliced loaves every week $1.00 each. Freeze one and refrigerate the other. I use it as my sliced bread or as french bread pizza. So versatile and I enjoy thicker slices for my morning toast with butter.

In my country most traditional soups start with a basic of diced potatoes, onions, carrots and water in a pot. And then most soups are just various with some additives. I said that because these soups are interesting for me, like, I never tried such a thing like taco soup, but I wanna try it. :3
