You should certainly gaze at the demand locally. And whatever cuisine you feel is in most demand, you should start with that. Ultimately you should be confident about the cuisine you are starting with.

This economics may be possible in north india I have friends running a small restaurant n economics vary so much Even big restaurants arent doing 800₹ ticket May be filter coffee, rameshwararam, idc may be doing this 800₹ in indiranagar bangalore Not possible in tier 2 or 3, i know of a big restaurant in tier 2 spent almost 3cr on a restaurant n not able to do this kind of revenues im told they r struggling to do 10k revenue per day n its a huge tourism hub

No chance of getting a helper at 10k .... I had ro shut shop because of this..searched highs and lows to get reliable helpers but no luck. This guy just came to sell his own franchisee.
