Does anyone know how /where to calculate the maximum arc gap that 100V DC will jump across?

The problem is that when you interrupt a DC current, the voltage will rise as high as needed to create an arc. Once the arc forms, the circuit is no longer open, because the arc actually has a low resistance. Interrupting large DC currents in long cable runs requires careful design.

It's not so much the voltage as it is the air being ionized forming a conductive path. AC is less affected because the zero crossing interrupts the energy giving the air a chance to return to an insulating state.
