great job on the desserts!!!!!! I actually prefer the oatmeal pie over pecan pie. I am not a fan of pecan pie but I do love the oatmeal pie. For the krispy treats, I always make them for Christmas. For a twist, though, I use fruity pebbles at Christmas. They are so colorful, and you will have people trying to guess what you used to make them. Do it the same way as always, just switch out the cereal. You can also use cocoa pebbles, but the fruity pebbles are really pretty on a Christmas cookie plate :)

I have two kids that are allergic to peanuts and tree nuts and I feel the same way about feeling guilty with the pecan pie for Thanksgiving. That was always my favorite growing up. Last year I found a recipe that you could use crushed up pretzels on the top and I promise it tastes just like the regular pecan pie. I was so excited that they finally got to try it. Like I said, it’s one of my favorites!

Mel, I make the chocolate eclair dessert all the time. A lady that went to my grandma's church gave my granddaddy the recipe when she made it for a dessert for a bible study at her home. Also, I make my own chocolate sauce using cocoa.

I make a Pumpkin Dump Cake that is really Quick and Easy to Throw together as it takes fewer ingredients. This is my version. Pumpkin Dump Cake 1 Spice Cake 15 oz can of pure pumpkin 2 eggs 1 can of sweetened condensed milk 1 tsp pumpkin pie spice 12 Tbsp Butter 1 tsp vanilla 3/4 cup pecans, optional Preheat oven to 375 degrees. Grease 9x13 pan. In bowl mix pumpkin, condensed milk, eggs, vanilla and pumpkin pie spice. Pour into prepared pan. Top with dry Cake mix. Add the butter cut into cubes. Top with pecans if you want. I like to add them 1/2 way thru baking. Bake at 375 for 45 to 55 minutes. My daughter has a peanut allergy and Walnuts and Hazelnuts but she can eat pecans and almonds. . We love Eclair Cake. We even make a Chocolate Mint Version at Xmas. We substitute chocolate Graham crackers, white chocolate pudding with 1 tsp peppermint extract and a few drops of green food coloring to the pudding. Everything else stays the same in the recipe. It makes a Chocolate Mint Eclair Cake that reminds me of Thin Mint Cookies.

Funny story; I LOVE chocolate eclair dessert and a lady in our church made the best. One homecoming I brought me a cup home and set it in the fridge to enjoy after my well deserved nap. Imagine my surprise when I got out of bed and pulled my Dixie cup of eclair out of the fridge only to find it empty. My husband had ate every bite and put the empty cup back in the fridge. Mashed up sweet potatoes + did u know that there's some sweet potatoes in a can with Splenda? Also some with just water, no sweetener. Anyway, I'd add maple syrup to the sweet potato mixture. Just take it from me, use the canned potatoes, they mash & taste just as good! Maybe add Coconut vs chocolate on top. Yum, now I might try it too!
