A good substitute for Green Chartreuse is Genepe des Alpes. When mixed in a cocktail it really does come close. $30 a bottle at Total Wine and More which is half the price of Chartreuse these days.

Question: for making the chai syrup: do you put the allspice berries in as a whole or do you need to crush them up? Same for the cinnamon. I'll definitely have a go at the chai'quiri!

I really got into homemaking liquers/liquors so I would love to see videos on them! Especially something like an ancho liquer! That can go for $55/bottle in my state so making it at home would be a useful alternative!

Would definitely be interested in seeing more liquer recipes! I prefer to make/use them over syrups due to the shelf-life difference. Made a watermelon rind liquer that turned out fantastic (yay for waste reduction)' Picked up some frozen pandan to try my hands at a pandan liquer. Also not opposed to homemade tinctures and bitters.

My first original cocktail is very similar to the American Trilogy. I called it the "Home Alone". It is Bourbon, Cinnamon, Angostura Bitters and Pine Bitters. You could make it a "Home Alone 2" and split the base with Bourbon and Apple Brandy.

They all sound delicious! For the Rosemary Ricky - would it work to use simple syrup and muddle in some Rosemary leaves? If so, what's the best technique for that? (I am but just one person and already have 6 syrups in my fridge that I don't go through fast enough!)

Of course you can do that! I prefer using syrup with calculated ingredients for consistency but for home bartending, this can work.

That's as simple as that. about 2 sticks for 250ml of syrup. Make sure to add the sticks when the liquid is hot
