OMGOSH.....my mother used to add bacon drippings to the flour tortilla mix whenever we had bacon. Made the best bean and cheese burritos. I'm in my 70s what an emotional memory. 💜

It also helps if you add a little water to the pan when frying bacon. The water will evaporate and it will render most of the fat out. Love your recipes!

Casseroles are the unsung heroes of the kitchen. Comfort food always wins. The cornbread casserole would be really good with green chile as well. All of these are really handy if made in foil pans and frozen. Write cooking instructions on foil. Very handy to provide meals for new parents, those caring for ill family, etc.

Nice casseroles!! You can make a great broth with corn cobs. Very flavorful! I make a shrimp and corn chowder with them. It’s my own recipe. Basically make the broth first a little chicken powder cook shrimp with shells on for more flavor. Remove and peel. Cook cubed potatoes in the broth and add sliced zucchini and yellow squash with the corn you sliced off the cobs. with a little milk and cream. Thicken with roux. Add milk and a little cream. Add back the shrimp. You have to time everything to not overcook anything and it’s better to cook your shrimp in the flavorful broth from cooking potatoes and corn cobs. I’ve been making this for about 15 years.

My bacon grease hack, I pour it through a coffee filter into a jar and refrigerate. Clean bacon fat that is ready when you need it.

I love how organized you are with your recipes and I love the recipes I’ve never made them before and I will try them but you don’t waste any time with extra chitchat like some people do you do the recipe and that’s what I like you will be my go to person when I want to get recipes I like to look at the recipes I don’t have a lot of time I do other things and I like to watch someone make it learn it save it if I like it but if it’s somebody that doesn’t think that someone has plenty of time to watch chitchat some of us are very busy. Hominy casserole is REALLy good too, and has become one of my usual dishes. It takes a can of white and a can of yellow hominy, about 1/4 to 1/2 cup chopped pickled jalapenos, an 8 oz container of sour cream, a can of sliced water chestnuts, 3 or 4 chopped green onions, and shredded cheddar cheese for the top, salt and pepper to taste. I think that's it. Then 350 til it's brown and bubbly :) So so good. These dishes you listed are great and I am going to be trying them, as I trust you to know what I like :) God bless you Gochujang Momma!!!

I just recently started making onion rings where my boyfriend helps me chop the onions and make the batter and we fry them in the oil. We add the onions rings on top of the caserole and it really makes the whole caserole so much better. If you have the time to do it I say do it. 👍 this is our 3rd year making it and it's something the family looks forward to ☺️😋

That looks really delicious I have also made a cornbread stuffing myself and what I do is take the cornbread box like you used and put a it depends on one or two boxes of cornbread ever have much I want to make so I put either half to one box or a whole cream of corn to my corn and mix it in I fry my hamburger meat with onions drain it on and put a little bit of cheese in it what I do is put half of the cornbread mixture in My Pan and then put my hamburger meat onions and Jalapenos in it with a little bit of cheese and then spread out the rest of the jalapeno cornbread on top and bake it till golden brown and I got to tell you it's really good I've even used ham and cheese as the same food here but I don't put onions or jalapenos anyway thank you for your recipe and that 10 minutes or so before it's done I put cheese my yellow cheese all on top and let it melt and then yummy yummy to me

I use fresh bell peppers in place of jalapeños or green chilies. They are mild, full of flavor and cost less.

Coming from the Midwest, I know a lot of people will use crushed potato chips or crushed cereals to make that crunchy topper, and these days panko’s easy to get. One of those probably has a gluten free version if that would be better.
