INGREDIENTS
2 1/2 to 3 lbs beef chuck roast
1 lb potatoes
3 Roma tomatoes
1 small onion
3 to 4 cloves garlic
1 1/2 tsp ground cumin
7 to 8 Tbsp all-purpose flour
40 oz beef broth or stock
salt and pepper to taste
Soft Flour Tortillas
3 cups all-purpose flour
1 tsp salt
2 tsp baking powder
1/3 cup lard or unsalted butter
1 cup hot water

Grew up on guisos. During hard times, it’s all my mom could make. Sometimes there was no meat but she’d use cactus or potatos only and switch up the salsa here and there. Hated it back then because I thought it was boring, now at 26 yrs. old I ask my mama for it all the time ❤

Well if beans on the pot. Rice in another. If Poppy got elk or venison we were happy. Always sold the the cattle, goats, sheep, hogs to market to keep the lights on. We would pick all the corn, tomatoes carrots, taters to sell at the market. We would save melons for a treat

Carne guisada was probably my favorite childhood meal. Usually we had frijoles with it but sometime mashed potatoes (since my mom didn't actually use potatoes in her version) or corn. Always fresh tortillas. I don't know how my mom worked a full time job and still found time to cook for us all but thank God she did.

This was seriously so so delicious. My husband said it was the best meal I’ve made in a while and he wants it more often. Towards the end of it simmering I removed a serving for my daughter and then dropped a jalapeño in and let it simmer for another 10-15 mins. I know tomorrow’s left overs are going to be BOMB!

That's so sweet of you to do that for your daughter. I remember as a kid there was always one thing i didn't like and mom would set a serving aside that didn't have that one ingredient. For me, it was onions, lol. Your comment just brought me back.

I started adding a sliced jalapeno into my guiso and now that's the only way I want it. It adds such a depth of flavor without being too spicy. Now I am seriously craving it!

Looks like a good guisada recipe. I’ve been making guisada (and all good TexMex) myself since 1988. That’s the year we left San Antonio for Georgia. There was no good TexMex here then and honestly there still isn’t any. I do add a bit of chile, usually serrano, to mine. Enjoy seeing your take on the dishes.

I love your recipe and will do it. When I had my home full of kids and a wife, I could not buy flour tortillas in a packet. I sourced a distributor for Masa Harina but it was a 5-kilogram minimum bag. With the Masa Harina, I only needed to add water. I used an Indian Naan press and griddled them as you did, with each going into a tin foil wrapping. My ingredients were pressure cooked, all assembled and in the oven to blend. Sad now is that my children are working overseas or interstate. When they and my grandchildren visit, from all my recipes wanted - are my enchiladas topped with my homemade guacamole and sour cream. A proud Dad.
