Oh I have to tell you, these are absolutely BRILLIANT! I'll admit to swapping the 1/4 cup plant milk out for 1/4 cup sorghum/molasses so my husband would eat them (he did) but I took these to work and all the girls wanted to share, I had to bring the recipe and enough for everyone the next day🤣 We're restaurant workers at a very busy truckstop diner, so none of us ever have time to eat properly or healthy. One of these for each of us, possibly along with one of those killer Almond Joy protein balls of yours that none of us can get enough of, packs enough punch to get us all through the worst of the shift. I will definitely be making these, every time I have leftover bananas - which is quite often because hubby's window of banana perfection is very small! I love how quick and simple they are (I put mine in a silicone muffin tray) and how the recipe uses items I already have in my pantry.

I make these all the time! Just add bananas, blueberries, cinnamon, & vanilla. 8 minutes in the air fryer.. then I flip them for another 4 minutes. Such an easy breakfast to take on the go

Love the recipe…my wife’s eyes lit up, and we’re definitely gonna try it! My current go-to evening “dessert” is similar, but unbaked. In a bowl I mash one banana with one tbsp peanut butter (homemade)…stir in a dash of cinnamon and one tbsp of cocoa powder. Then fully mix in 55 grams of rolled oats and 15 grams of raisons (or dark chocolate chips), cover and let sit on the counter for a couple of hours until I get hungry post-dinner. After watching your video, I may tonight decide it’s time to see how it would bake up in the air fryer...thanks for the inspiration!

Hi there! My wife made the cookies per the recipe and they turned out amazingly well! As for my air fryer experiment with my dessert, the "batter" was a bit loose to form cookies, but they did make really good fudgy rounds when baked off after simply scooping and placing on a silicone mat...better than I thought they were gonna be (I think the particular banana I used that night was much larger than typical). The cocoa powder was originally added for an antioxidant and fiber boost, but I've grown fond of the flavor depth it adds. I'd love to hear your opinion if you try it! Thanks again for sharing! 👍

@@edus82 yes almond flour is definitely not a staple for us either because it’s so much higher priced. I store it in my fridge too because I use it pretty infrequently. I’ve actually never tried those cookies with something like oat flour… 🤔I’m curious how that would turn out. There may be an experiment there lol 😜

FYI: My boyfriend was a pastry chef… When I started making similar cookies he suggest I use an ice cream scoop to make my cookies uniform and then I just flatten with my fingertips. Makes making cookies super easy :)

Made them and added pumpkin seeds. Nice. Love the no sugar. I added a tablespoon of date paste. Love they are oil free also. I use very little to no oil. Too much calories in oil. Watching my cholesterol.

Thank you for sharing this recipe. Since I am unable to find dried cranberries that don't have added sugar, I would substitute raisins or chopped dates instead. Maybe some tamarind once the pit has been removed. If I am able to find a non-dairy, unsweetened form of chocolate chips, I would also use those. Was used to be able to find those at Trader Joe's, but now live where there isn't one. Is there a reason for using the quick oats as apposed to old fashion oats? I very seldom if ever add any sweetening to my foods that are normally sweet because the fruits used are already sweet. I miss being able to have chocolate mint cookies. Have yet to find a vegan recipe for this.

You can definitely use old fashioned oats! I always tend to have quick oats on hand but rolled oats will be perfect 👍🏼 and yes I love chocolate mint cookies too! Is it the thin mints cookies you’re thinking of? I’ve been wanting to try a version of those.

@@kathiemott3988 yes I have a recipe (and video) for chocolate coated peppermint patties because I always loved those too. I was able to make them with less sugar by using coconut for the filling instead of just powdered sugar. I’ll definitely get to work on a thin mint thought!

Oh that’s a great idea to sneak some sweetness in there! I definitely consider these nutritious, especially for a cookie! There are sugars but they are mostly natural (especially if you have unsweetened cranberries and applesauce). They have lots of fibre and many vitamins and minerals. All that said, I still wouldn’t eat too many in a day but a couple as a snack are definitely more wholesome than a packaged alternative.

I use either golden or regular monkfruit as a sweetener. No calories and no sugar spike. I might try dried blueberries and almond or lemon extract in this inviting oatmeal breakfast cookie. Or, dried apple & walnuts?!

I never understood the purpose of adding sugar (or any sweetener) to banana sweetened recipes. I never did even if recipes called for added sweeteners. The banana is sweet and it sweetens the baked goods :)

Hmm I’ve never tried that but I’m thinking you could cook them over very low heat on a non-stick pan and maybe turn them after 7 minutes or so if the bottom side is dry. A couple recipes I quickly looked at for stovetop cookies took around 15 min at a low temp. Let me know if you try it!
