This lasagna was amazing. I have made many vegan lasagnas, and this is my #1 favorite. My husband and son are not vegan, yet they finished off the pan. Thanks for a very well-constructed recipe that you clearly spent time testing. It will be on regular rotation at our house.

I made this for Meatless Monday. This Lentil Lasagna recipe is a keeper! All of my guests raved about how amazing it tasted, and they couldn’t believe I made it despite having a busy workday. I followed the recipe exactly, and the time stated was spot on. I used gluten-free organic brown rice lasagna noodles, which didn’t require pre-cooking. To ensure perfect results, I covered the dish tightly with unbleached parchment paper and aluminum foil before baking it for 57 minutes. The result was absolutely delicious-flavorful, hearty, and satisfying. I served it with fresh avocado slices and a simple salad, which paired beautifully. This recipe is a winner, and I’ll definitely be making it again. Highly recommend! Immediately subscribed! I can’t believe I’m seeing this very talented and lovable couple for the first time! Yes! I haven’t tried this one on any other recipes as just a cheese sauce but it would be so easy to boost up the flavour if you felt it needed it for different uses. It’s nice to not have to soak cashews or anything and just blend it quickly 👍🏼

I made this for my family last night and it was gone before everyone left the table. I questioned the recipe, because of the tomato sauce that was used, but sure enough it is delicious. I combined Miyokos plant milk (mozzarella) with the cheese sauce and it was divine. Thank you for inspiring me to use lentils!

Oh great! I’ve only used soy curls a couple of times and I’ve never actually used seitan myself so I’ll get thinking on those. You might like watching our playlists because that will lead you right to the videos we have that fall into some of the categories you mention here “protein packed”, “easy weeknight meals”, “amazing tofu recipes”. And I have a sweet potato bread video that could easily be made with pumpkin and a video on “my universal vegan stir fry sauce” that I use on a rice stir fry (not quite fried rice but close)!

I think I'll do this with black lentils, I love their subtle flavor, smaller size and that they hold their shape well. Have you tried freezing it? I'm a single, cat lady (lol) and this would last me quite a while!

I’ve never used black lentils actually! I’ll have to try them. And yes! It freezes really well (I made this three days in a row because of all our filming and photos 😂 so we have lots in the freezer!) I have some instructions for freezing it in the recipe card on the blog if you click the link in the bio. I prefer to defrost in the fridge overnight and then bake at 350 F, covered, for 30 min. Baking from frozen just takes quite a bit longer.

Thank you! I’m glad you’re liking them! You can definitely substitute something like smoked paprika, chili powder, ancho powder etc for the chipotle pepper. I use 1 tbsp chipotle pepper in adobo sauce so I would probably suggest 2 teaspoons of something like smoked paprika and if your chili powder is quite spicy I would start with less. 1 tsp and give the sauce a taste and add more if you’d like. I hope this helps. Let me know if you try it!

Thank you! I’m glad you like this one! The tofu cheese sauce is dairy-free but if you need a soy-free version you could use white beans or soaked cashews instead of the tofu! For the beans I would probably try using 1 cup (170g) white beans to start (you might need more milk if it’s too thick or more beans if too thin). For cashews I’m thinking you might need 3/4 cup (96g). Let me know if this helps.

I make a vegan “queso” which I freeze and grate but I haven’t tried a grated cheese on this lasagna. A grated cheese even on the very top layer might give this lasagna a look more similar to a traditional lasagna (even if there’s no cheese pull action) lol. I haven’t figured out a way to make a more solid, grate-able vegan cheese without using coconut oil to help it set. Let me know if you have any current favourite recipes!

Mine is 9x11 and I get three layers of the lentil “meat” sauce in. You can use whatever you have (a couple smaller dishes for instance) and make as many layers as you can.

My family, for big festive occasions, always makes lasagna -- meaty and meatless options, but the meatless isn't vegan, so I'm going to see if I can persuade them to swap out their cheesy meatless for your vegan cheeseless recipe for the next big familial get-together. (As the daughter of people who work with LOTS of food, I'm sure you have some idea of just what a lifesaver it is to have OPTIONS for LOTS of food for LOTS of people... :-D lol) There a specific wine you preferred to pair this with? I saw the red, but since this was technically meatless, I wonder how white would've gone? (Also, are there proper vegan options for wine-drinkers, I wonder? I may be misinformed, but I did think there were things like fish bladders involved in distilling and such, but then again I may have completely the wrong end of the stick, on this, so correct me if I'm wrong, please!) By the way, have you and Bryan got a vegan pierogi recipe? 🙂And, if you do, do you prefer the pierogis soft or crispy? Looking forward to that pear salad next week!

Haha yes I definitely know what those family functions are like! Yes most wine does include animal products in the distilling process. There is a site called “barnivore” that lists vegan wines and is really helpful! White would definitely go as well! We don’t have a pierogi recipe although we love eating them! I prefer them crispy. I have a recipe for a Portuguese turnover which is quite similar to a pierogi but with a “shrimp-like” filling. I could probably take that dough and try a pierogi!

Interesting thought. There are a couple of azorean islands that produce wine and it is known as “volcanic wine” but I can’t really recall whether I’ve had them and if they are good or not. I’m sure they are 🤷🏻♀️ lol
