Penicillin is right up there, but the ones i have been enjoying is the traditional recipes with a few slices of jalapeño to add a little heat in the background that pairs well with honey.

Love the Penicillin. It really grew on me over time. Since I don't really need ginger syrup for anything else, I do it with freshly muddled ginger and a tiny bit more of honey sirup. Works too. Maybe worth mentioning, the honey itself leaves a lot of room for experimenting in all these cocktails. Different kinds of honey bring so diverse and unique flavours with them, they can give the cocktail a complete spin. I have been using a thyme/pine honey lately. It's fun (and tasty) to play around with such twists.

Nice video! My favorite honey cocktail is a "Bee on an Elderflower." It has St. Germain and prosecco in it. It adds variety as I try to use up my honey syrup.

Love the three vids! Really enjoyed that you didn’t do 15 all at once as this makes the experimentation more manageable. I will do the Bee’s Knees / Gold Rush combo when we have friends over because of their different palettes and ease of just switching out the base alcohol. All that said, I think vid 2 peaked my interest the most.

Gold Rusher which seems to be in between a Gold Rush & a Penicillin with the addition of Fernet. Party Line which is similar to a Siesta & Naked and Famous. Canchanchara and Brazuca Remedy are two Cachaça cocktails but the later has only one bar spoon of honey syrup so it might not come through enough to be a honey cocktail. All four are dern good, and I'm always finding more from you and others who keep pulling back the veil and showing us something we haven't seen before. Cheers!

I often make "single serving" amounts of honey syrup (or simple, too...) with a shot glass and 10ish seconds in the microwave....stir and add to your tin etc.

I love honey in my beverages. I use “Glory Bee” syrup (1-1 ratio) for my cold brew coffee in the morning. From someone in Arizona, $20 for limes is insanity. I picked up your book and will be trying these asap!

Gotta say the Gold Rush is one of my favorites as well. I use your 3-1 honey syrup mixture with local honey from my area. It’s great. I use Buffalo Trace, and I know you’ll probably say whatever you prefer is good as far as bourbon goes. I’m curious as to what is your favorite bourbon to use in your Gold Rush?

The Buffalo Trace we get here in Australia is only 40% ABV, heavily watered down so it gets lost in any cocktail. So I mostly go for Wild Turkey 101 or Bulleit Rye for a bit of extra spice when mixing cocktails.

Did I create something new? Used a Southside template: 5 - 7 mint leaves, 3/4 oz honey syrup (I like the triple syrup, equal parts honey syrup, agave & simple syrup), 3/4 oz lemon juice, 2 oz Laird's Apple. Shake & double strain into a chilled coupe. garnish with floating mint leaf.

I wish you had taken a minute to reinforce the thought that making honey syrup is more delicate than other syrups. Heating the honey too much degrades the delicate flavors of the honey. Especially if you're using a honey that's a step up from clover. I know you covered this before in the syrups episode. My trick for honey syrup has been to add the honey and warm water into a bottle, shake a bit, then warm it up in a baby bottle warmer. I'd been making bees knees most of the summer but recently switched to gold rush as summer has ended.

13:15 those who cant have grapefruit juice also need to be aware that the same compounds that are a problem can also be found in many lime varieties most notably Persian limes but not as much as grapefruit so don't go crazy with the lime juice cocktails

I think the type of honey you use is pretty important here, as some honey syrup I made got lost in the cocktail and I couldn't really taste the honey. Not sure what kind of honey has nice and strong flavour though.

Good point, and if you're watching in Australia we have a plethora of delicious honey to choose from. I checked out Steve's syrup video and he used Capilano honey, which probably gives just a straight honey taste.

A passable alternative to limes if it is prohibitively expensive, is to make superjuice with lime acid levels (adding malic acid) with lemon peel and juice.

I guess Penicillin is my favourite, but I find it a bit hard to be consistent regarding the balance. I don’t drink enough (or entertain guests enough) to bother bottling ginger syrup, so I usually end up just muddling ginger and add honey syrup, which sort of is a hit and miss for me.

As far as “style”? No.. I sometimes shake a little differently for no reason.. but as far as duration, yes. Some cocktails I shake less as I want to combine the ingredients without the extra dilution (such as the Shoemaker in one of the later honey videos).
