The way I found this video is I searched for "Hot to make mojito less bitter". My problem is that I dont have a citrus press and my limes are straight out the fridge so they are quite tough to muddle. Muddling the limes so hard though makes the bitterness in the lime's skin escape. Do I just let them limes sit outside the fridge for a while before muddling? Its not overly bitter, I dont mind it either but I really want a more sweet and sour mojito without the bitter touch to it

My question is: where do you get butter bean juice? Open the can and keep the liquid? Cook the beans and keep the liquid? Mash the beans and keep the liquid? How do you have to store it?

We have been questioned/criticized for stirring our drinks for two minutes. The main reason we do this is because we make very boozy cocktails which need that dilution and we want to reach equilibrium. Also, as shown in this video many of our drinks need the clean look as opposed to the slushy look. At the end of the day it's most important to choose the method and amount of time that is going to produce the best tasting cocktail for you. Great video, happy to have found it!

Hey Steve long time lurker first time poster.Love your channel and your book. I have some terrible bar equipment and was looking to upgrade. I've been looking for your recommended 'A Bar Above' products but shipping to Australia's really prohibitive. Do you have a list of recommended locally available jigger, shaker, strainer, spoon etc? you can replace vodka with pisco in a lot of cocktails (espresso martini an exception). and for traditional peruvian pisco cocktails ... chilcano (wich is an older version of a Moscow mule but with pisco) ,pisco punch, capitan, passion fruit sour (highly recomend you this, if you try it and have passion fruit monin use 60ml ,90ml pisco and egg white, it would be one of the best sours you will ever try)

El Gallito looks like a real cool drink, I’m definitely going to try that one first, although I may swap out Campari for Aperol. Which is less bitter and more sweet and may lessen the need for berry syrup, but we’ll see!

Yes, that’s correct but it’s pretty widely accepted that a “whiskey sour” is made with egg white even though it’s technically a Boston Sour (I often mention this in my videos).

That flavour would be very different. Suze is a gentian liqueur… you could either make a gentian tincture (gentian macerated in 50% abv vodka) or infuse another ingredient with gentian, perhaps vermouth… 🤔
