I am almost 27 and have been in engineering for 4 years now. Yes I make great money, got to travel all over the US, Germany, vacations to Hawaii. But I was a mediocre engineer and I had no passion. Everyday I dreaded to go into work, so the grass isn't always greener. I'd rather take less money at this point and switch to culinary and give it MY ALL to become a head chef or sous chef one day because that's what I have always wanted to do. While I was going to engineering school I worked as a dishwasher in a fine dining restaurant. I worked my way up to saute pretty quickly. Yes it's hard work. But theres a calm in the chaos that I love and it's fulfilling to me. I could go on all day about this, but really you can become an engineer but you are never going to be satisfied personally if you never wanted to be that. I know people that make great money in the industry and hate their lives because it's extremely stressful and you are always traveling to places you don't want to go. It's all about cycle time and production production production. Analyzing stupid charts and statistics to make a better product. That's fine if you love it but I am finding it's not for me and that I am going to take the leap to pursue culinary again.

As you get older, you'd be glad to have a better career than culinary, trust me on that one. It does not pay well at all, and is high stress (Well, could depend where you work at too). But in my experience, not worth it. Trying to change career paths now. By the way, I've worked on my feet so long, doing culinary for 10 years that many of my nerves in my feet died and I can't really feel much, they're like numb. My doc at first thought I might have diabetes, but no. I just killed the nerves from putting too much pressure on them for too long.

Okay to the people that say their dreams are crushed. Being a chef has it's down sides for sure and it's good to know them. It also has good points. Everything he said is pretty true. The kitchen ages you like. I've been in commercial kitchens for 16 years. I went to culinary school (which was great for me) and every so often when I've worked a long shift I've asked myself why the heck am I doing this? You sweat, you burn, you laugh, you make friends, you learn new skills, you will never starve, your pay will probably suck, you'll feel satisfaction after the day is over, you'll miss your friends, you may cry, and your dreams may become more realistic. Remember there are other culinary jobs out there. You're not just stuck to Restaurant kitchens. Private schools give nights and weekends off, some places have stable shifts. After a while, Start a catering business, make it amazing and create your own income and hours. Its about what you want to put into it and get out of it. Just remember to get good shoes

All of those reasons make me want to come back to my kitchen. I like it there. I feel at at home. I find enormous amounts of comfort while I'm working. The physical demand and injury, I feel, is just part of the game. The best part of cooking is seeing recipes come to life. Creating something. And as a line cook it's the adrenaline rush and the troubleshooting, which has to be done in seconds, to keep the work flow going that makes me love what I do. Also cleaning. I love cleaning. Flat tops, grills, fryers, salamaders, ovens, dishes the dish machine the walk ins, all the counter tops. Everything just feels right! I wouldn't want to do anything else in my life.

I think a lot of us like the idea 💡 of making great meals that everyone is impressed and amazed by. But the working life of the chef 👩🍳 does not seem appealing if you look at it as a whole. You definitely mentioned the drawbacks. I guess another option might be to be a private cook 👩🍳. But you may end up having to hire a staff depending on the demand you get.
@kernow26193 жыл бұрын
Let me break this down for aspiring chefs here in the UK. This video is from an American’s perspective and so isn’t accurate for you: 1) 40 hour work week is standard in the UK, overtime is optional and can’t be forced upon you. 2) 28 days paid holiday per year is standard in the UK, skipping them is optional, if you do you’ll be paid for them at the end of the tax year. Being forced to skip them by your employer is a criminal offence. 3) If you’re careful and have a bit of common sense you probably won’t hurt yourself after your first week or two. Practice makes perfect; everything in the kitchen comes down to technique, you’ll get better with time. 4) Head chefs having big egos and being assholes is a myth, thank Gordon Ramsay for that. If your head chef is behaving like a bully in the workplace, that is a criminal offence. Report it. 5) The restaurant business pays a competitive and comparable salary at starting and at high ends to most, if not, all other industries. You won’t make millions but be honest with yourself, what salaried role WILL make you millions? I can’t think of any.

Hi, Sam! Why at age 60 would I become a prep cook and line cook trainee at a local diner after lifetimes in the sciences and the classroom? A couple reasons. 1) I love making food for others and seeing the smile on their face as they enjoy their meal. 2) Making food has it's own stresses that are different from report cards, parent/teacher meetings, and research papers. 3) It is a skill I can take with me across the country and into other countries. 4) Perhaps I can help others with my cooking. For the past 10 years, I have been making subs, pizzas, wings, packaging prepared foods, making ready-to-cook meals, and chopped veggies for a top foodmarket chain here in the US. In a few short years, I will shortly be collecting SSI. That, with my teacher retirement, will give me a reasonable life. I want to enjoy these years putting a smile on the faces of others, and give them food that satisfies and pleases.

Have been a chef for 8 years. Suggestion from me is not to be a chef. 1. Unhealthy working hours,you gotta work most of the weekends. What about you family? 2. Abusive working environment, chefs in higher position normally can't not afford to treat line cook nicely. Whatever non-sense that is, you can only replay "Oui Chef" and do it. From the mistakes that is made by the front of house to some wanker customers' request. Also the politics in the kitchen. Yes,baby, you gotta suck it up. 3.lowwwwwww pay! Be a responsible adult, make enough money for yourself and your family. Stop using "passion" as an excuse to cover up a person's dumb choice. What about when you need money to buy a house, pay for bills or pay the medical treatment for your families? Passion is fuel to pump you and it will definitely run out. 4. Physical work. Can you still carry 30kg stock pot without doing your back when you are 45yo? If not, what you are gonna do when you are too old to work in a restaurant but still need income? Guy allow me to introduce you, some terms in negotiation and statistic, is "Framing" and "base rate". Every time I heard about people saying why you need to become a chef is all those small frame thinking ( which can only be prove right in very minor cases) and disproportionate base rate, which are not logical and rational. I love cooking so I quite my software engineer to become a chef, now I'm leaving this job. Can we stop sugar coating how fascinate is chefing. The whole industry is full of uneducated people, rude and dumb. A smart person will chose their career and the environment where they in wisely. Everytime I talk like in a kitchen, my partner has to remind me, do not bring the language home. How pathetic that I know it is not good but can't stop it from influencing me. If you really like cooking, go get a good job. Buy some proper equipment and cook for your friends and families at home. At the end, remember that, you are only as good as the last service. Can't be as good for that long? Then quit.

You know when u are chef u just kind of throw away your personal life and live for the food and cooking. It's almost as If u are married to it. But if it's not just something you like to do from time to time, but you have passion for it, then you should do it. I allways wanted to be a chef or at least work for good chefs. I love cooking I love trying new flawors, be creative. Cooking is like art.

Culinary student who graduated my 4 year degree and worked in NYC for a year here 🙋🏻♀️.....DONT DO IT. Everything he said was true. Even though cooking is my passion, I was burnt out most of the time, and I get paid crumbs. Totally not worth it.....I wish I could have turned back time and gotten a food science degree instead.

I’m currently working as a pantry chef, thought about doing this as a career, but the fact that it requires tons of overtime and very low pay simply bothers me.. even the fact that my severs usually make more $$$ than me at some times too.

I travelled all around Europe while being a chef.. I’m getting payed on average 2k4 € per month. That’s a lot more than most of the people I know with « normal jobs. Yes it’s long hours, yes you have to deal with some absolute idiots, but depending where you work you might find a lovely team that feels like a group of friends + you could work 4 days a week (most restaurants do this now, for exemple in Scandinavia)

Making food is fun and interesting. Being able to bring a smile to people's faces is a joy. Also having the knowledge to make an amazing dish will be satisfying. I want to one day be able to cook for the people I love and bring a face of fascination, love and joy.

My last cooking job. It was the beginning of the year I found a Craigslist ad for a new smokehouse in my city located in some desert. it started off in chaos they were running out of a food truck before this brick and mortar, I was trained in every station and pushed over 80h a week at some points, only making 16.5k that whole year on the books, for the back of house and ceo's we all lived together 7 people for 1 bath I was in a camper out of two at are bbq compound ...we made stare ratings on every media outlet. Reopening in Ohio

overworked, underpaid, treated like sh*t by customers and other chefs, no social life, no family or friends, no wife, no dating... well... screw that there goes one of the career I wanted I am passionate about cooking but passionate enough to let those go I want to have a wife and family... I graduate my 2 year community college in less then a year and now I'm back to ground zero now I don't know what career to choose or where to transfer... now I'm scared I did not make a backup plan...

Been in the business for 16 years. Always been a sous chef, never head honcho. I feel like culinary school won't do much at this point but give me a piece of paperwork. Would you say it's worth the 35,000?

You gotta remember every environment is different and in Australia we have minimum hospitality pay rates and work conditions ... So, yes it could be very stressful and time consuming but at least here you'd be compensated, you'd learn a lot and maybe get to a point where you start your own restaurant one day... It's been done before by more than a few chefs the world is filled with restaurants and food trucks, the goal shouldn't necessarily be to become the next gordan Ramsay, it's to do what you love and work for yourself doing it. Don't give up!
