I can say with confidence that I'm a soup-a-holic. 😄 One of the things I really appreciate about them is that you can easily make them into an all-in-one, one-pot meal -- meaning you can get all your nutrients in that one bowl. No having to make a side salad or a grain or a potato. Everything you need is in that one beautiful bowl. 👍

Last week I decided to get my act together and start cooking beans from scratch so I now have a larder full of dried beans. I’m going to try this recipe tomorrow(after soaking the beans overnight obviously!). I’m sure it will be delicious and seeing as soup is my all time favourite meal, how could it be otherwise?! I'm a big ol dummy when it comes to cooking. I LOVE to bake and can make some really delicious breads, but when it comes to cooking, it's just a huge blind spot for me. I normally make food that's just "good", filling, and nutritious, so this recipe was such an awesome upgrade to my normal veggie soup! The beans really did absorb SO much flavor while they simmered, and the end result is SO PACKED WITH FLAVOR! For my own toppings, I used field roast Italian sausages, fried French bread, and fresh parsley) Gonna be eating really well for the next few days!

love as always from Kiwi and me in Canada. There's a new tenant in my building with the most beautiful dog I've ever met (my Dad always had big dogs so ok on That List. His name is Simba, he's a Rottie/Shepherd cross, magnificent, patient stately and friends with Kiwi the wonder Peke who is a 10 lb bundle of energy. ... I have a vegan recipe I make this time of year I learned from a dear friend from Montreal, who passed away from AIDS in 1988 and whom I honour with all my soul. It's the obvious French Canadian split pea soup but traditionally made with a ham bone. Not necessary. Miso paste at the end and Robert's secret ingredient, an onion studded with cloves which no-one actually can identify. I recently learned to make proper sourdough rye which I've been eating all my life anyway and it permeates the house .... Also a lot of black pepper I know you appreciate I am far from being a chef of your caliber but both my parents cooked together (they were 2 gallant people who survived WW2 my Dad from Serbia who spent several years in Rome before coming to Canada and my mum a Berliner, Holocaust survivor who is as close to a New Yorker as you could possibly get ... they cooked together as did I and my late husband. I don't have unnecessary kitchen gadgets but thank god for the Instant Pot for this lazy person (that would be me). Push a button and wait for the timer ... it goes in 3 stages; vegan broth I collect in the freezer, check, soak the split peas they go in next and I blend a small portion. I do add a mirepoix. It feeds a multitude the proverbial loaves and fishes ....I volunteer in a soup kitchen and am happy to report that 80% of the people choose the vegetarian option. There's also a lot of dog food many people have no fixed address and there's a list of vets who also volunteer their time they can find. ..... I worry about you on the road in Trump America most probably your endless good will and integrity will overcome all obstacles. Sending best wishes for the hols.❤❤🐈🐈🐈🐈🐕🐕

Made this today with gigante beans. The broth alone from cooking the beans was scrumptious. I didn’t have fresh herbs so put dried herbs in a spice bag and let it steep with the beans. I topped mine with sliced banana peppers and nutritional yeast! Delish! 🎉

This looks so yummy! We love cannellini beans! I make a batch weekly, so I'll add this to my rotation of ways to eat them, of which I have many! They're such a versatile food. We just finished a cannellini bean sandwich for lunch, which is a favorite of ours. As I was eating it, I actually thought of you, Derek, and wondered if you ever posted a video on beans. @@merryworld4776 I lightly toast a Cuban roll or any oblong type roll (they hold the beans better), then reheat a scoop of the beans I've previously prepared (with some of the broth because I like it). After it's heated nicely, remove from heat, stir in a bit of olive oil and some vegan Parm (I use Follow Your Heart brand) to make a little sauce, then spoon this into your toasted roll. I also use vegan mayo on the roll and some homemade roasted pepper strips sometimes, but even without those, we love this very basic sandwich. I could eat it everyday. Hope you like it too! ❤️

You are soooo right about every advantage to making dried beans. Also, re: making dried beans - once I got the process down, they're super easy, and they practically make themselves. I feed 3 adults and I make 2lbs of pinto beans per week, and eat beans in pretty much everything I make for lunch/dinner every day of the week. Salads. Soups. With eggs. Vegan nachos.

In Spain this kind of soups/stews are part of the traditional winter cuisine. Instead of adding ready made broth, as you'll be boiling the pulses a long time you make the broth at the same time. Just add a lot more vegetables with the beans, after boiling for two hours what you have is a nice home made broth. You can sauté the veggies first, but you can just put everything together and simmer it. You typically use onion, leek, celery, carrot, parsnip/turnip, and add whatever you have, really. I like to add a couple of fresh tomatoes (peeled, diced) and, even if not traditional, a piece of fresh ginger. And one or two laurel leaves are a must. If you boil lots of veggies with chickpeas, the broth is delicious, which you can use for other recipes.

Hi Dereck! I made this soup and I was blown away by all the flavors. I swear it tastes like butter is added , because of the white beans. You are truly the master of soups! I love watching Frankie and her voice is quite funny ! I also love labs and have given my all my dogs voices.

Beans taste better al dente than al Dante. Dante is the father of Italian language and dente is the tooth. Love to watch you cook and learning a ton. Thanks!
