For non-italians, I'll summerize this video for you: My name is Francesco and I am 36 years old. I was born and raised in Italy in Emilia-Romagna. This is relevant, because my region was voted by the Time Magazine the best in the World for food, some years ago. My grandmother was a seventh degree black belt in cooking. My mother never cooked until her late fifties and she's pretty good. "Pretty good" in Italy means "oh my God never let this woman leave the Country" in almost every other part of Planet Earth. On land and seas. Or below the seas. Because of that, I picked up cooking. I can fight, and I let the other be the judges. Still, I NEVER heard of Mamma Rosa's egg plant recipe. But being italian gives me the power of judging a good or a bad dish by just looking at it. I would probably eat not less than 25 lbs. of Mamma Rosa spicy egg plants and I'm not even so stoked about spicy food but GOD, these are deliciuos. Ragù is a traditional bolognese condiment, and I'm from Bologna. Every houshold had his ragù. It's a poor people's dish, it's very cultural and ther is no perfect recipe. Yes, there is one that is taken as the original, but it's really not. There is a method, not a recipe. Me myself, I have always said Ragù is like Kung-Fu: all schools practice it, and it's all Kung-Fu, so no one is THE Kung-Fu. Mine is Wu-Tang style (and you better get the reference). This to say the beauty of italian cuisine is in Mamma Rosa's spicy egg plants: it's not a cuisine, it's the people. The video is amazing, the parmigiana is wonderful, you are a lovely couple and probably the REALLY good thing coming out of the pandemic up until now!

You italians don't realize ANY person in India, Middle east, which is like 2 BILLION people eat 100x tastier. Living 1 hour from Italy I tried it many times, Italian food is okay but believe me, the falvors of Asia, The carribean etc, they are something else with the most exotic fruits and vegetables you can imagine, flavors beyond. I admit, the US and Europe and Eastern europe probably have the poorest cuisine and in Europe Italy would be among the best BUT to compare it to the rest of the world.... NO CHANCE

When l toured Europe in the 80s I bought a moka as my souvenir of ltaly. I then stopped in london and rented a room in a bedsit so l could work and replenish my travel funds. Found out the group of Italians living downstairs hadn't brought one with them and were desperate for proper coffee. Mokas were pretty much impossible to find outside of Italy in those days so l used to leave mine outside their door as l left for work and collect it when l got home. After a few nights of this they invited me for dinner to say thank you and cooked MELANZANE ALLA PARMIGIANA . Oh my God. I thought l had died and gone to heaven! Made them teach me how to make it and made it EVERY NIGHT FOR TWO WEEKS. They thought l was mad but l didn't care. Even though l love eggplant in lots of ways, its still one of my favourite dishes!

Eva's incredible merit is to pick up, love, and treasure traditional recipes so well as she does in her loving, cute way us youtubers are lucky to see, because the real thing is she has behind her a mountain of tradition that's embodied by her family which I imagine very numerous, very respectful and honouring of the past, and families like this are responsible for carrying traditions over the generations, imagine them like avalanches. Not all accept, or care, to burden themselves with such responsibility because some of us want to feel free, because we still live in Italy, so we conclude let someone else do it, and if I lived abroad I'd probably just eat local food and besides I'm not fond of roots, I want to be a free citizen of the world etc. Fortunately many who leave their countries love them even more, and need to infact treasure their roots like she does, which is very moving, and Eva's love for her family and her country is so clear her eyes sparkle when she thinks about it and her mom, it's probably the main reason I watch these videos, to see those moments of pure love. Finally something so weird and unique like chocolate dipped eggplants is one of those beautiful odd little "secrets" that for some reason only history can give, because it's the type of creativity that people in the past had, it's like a dish ancient romans would eat, it's the "rock food of the ages", if you know what I mean.

I am from the Pacific island of Guam, and we grew eggplants as one of the vegetable groups. My mom used to cook it in coconut milk, after she roasted in the fire. Added shrimp, crab meat and chilies. Delicious. Try itt

My first eggplant parmigiana was at my best friend’s house- his mom is Sicilian. She made us sandwiches from her home made parmigiana- It’s still maybe my favorite thing. Cold eggplant parmigiana on fresh Italian bread as a sandwich- Stop! So good! This looks amazing Thanks for sharing!

Eva, DEAR SISTER, I thank you from the bottom of my heart. Eggplant is my absolute favorite vegetable. I LOVE it! My family, however, does not...of should I say DID not?!?! We run a small, organic, no-kill farm in the Missouri Ozarks. I grow A LOT of eggplants and have eaten them alone. But now, now I can eat my favorite veggie with my favorite people, thanks to you! 🙏🏼 So far, I’ve tried your stuffed eggplants (tonight). FAMILY IS IN HEAVEN! I’ve tried Her Majesty four times since I first saw this video a couple weeks ago. And the side dish multiple times with a total of ten eggplants. AWESOME! You’re the best! I’ve NEVER liked cooked tomatoes and tomato sauce was depressing to me. YOUR RECIPE is AMAZING! Now, I LOVE tomato sauce, if it’s YOURS. Thank you! PLEASE consider writing a cookbook! I've always struggled with my weight and emotional eating. I dieted for years and lost 52 pounds but covid hit and I gained it back. I'm new looking to develop a healthier relationship with food. So I'm trying the Italian way following your videos. I grew up in very Italian Lodi, NJ and my best friends grandmother I think was Sicilian and she taught me her sauce recipe but other than that I didn't learn much. I'm trying to prepare and eat good food that's satisfying but healthy. Health is also an issue for me as I've always been very sick and struggle with asthma. When eva says harper and then looks at him with a smile, she looks like a proud mamma and also sooo beautiful.. even my mother cooks awesome eggplant dishes though not italian ones... so seeing harper enjoy them is our victory too!!

They taught the French. French cooking was based on Italian. I have to say, I prefer Italian. It's more elemental and less fussy. But both depend on the best ingredients. There is no substitute for fresh, local vegetables, fruit and real cheese.

I'm a huge fan of your recipes and of eggplants! Usually I eat it as "her majesty" because it is just irresistible! Today I wanted to use the filling of the involtini to fill rigatoni and wanted to coil them with eggplant, add tomato sauce and put it in the oven with some parmigiano and pecorino... Tried one involtini like it is supposed to be... Ended up eating just the involtini as the main dish without pasta and sauce! Oh...and I forgot to mention that I only had goat cream cheese...a very good match! Just perfect! Unbelievably good!!! Thank you so much!

Walking through the produce section today, heard a beautiful eggplant calling my name. Brought it home and whipped up “Her Majesty” and OH MY! I’ll NEVER eat that breaded eggplant slop again! This was so delicious and light. Thanks you for sharing that treasure with us, Ava! Next I’ll try the rolled up ones with the pinoli nuts….I’m wondering how it would taste with just a drizzle of honey on top instead of the olive oil 🤔…

When I was a kid I never liked eggplant though my parents ate it all the time. Now I can't get enough of it! One of my favorite ways, and my folks too, was to slice it down the middle and bake it face down. When finished she'd scrape it and mix it with garlic, lemon juice and s &p. I appreciate how good this spread is now. My parents are gone but when I eat this they are there right next to me!!

Those dishes are so delicious! Melanzane alla parmigiana is my all-time favourite, and I usually make eggplant rolls with walnut paste, Georgian style. That dessert seems a bit odd, but I'm sure it's yummy. Mille grazie!

I don't think Olive Garden would permit cameras, lights and tripods to be carried into the restaurant. Besides, if OG is very displeased with Eva and Harper's review, they may ban them from the restaurants for life, and that may not be a risk worth taking.

Summer Tummer hahaha Eva shitting on Olive Garden food would be golden! I was imagining more authentic Italian restaurants albeit with American- Italian recipes. I want to see Eva like something that’s American-Italian, I like what is cooked at home, because it’s just not made well and wonder if she’s just missing out because she’s not exposed to the good stuff.
