Cayambe Ecuador is in the heart of dairy country, driving through is the sweet smell of rose farms and lots of bizcocho signs.
If you stop in in Bizcochos San Pedro between 8-10am you can learn how to make bizcochos. However, we arrived at 3pm for almuerzo and ate some of the local Ecuadorian foods in the Imbabura Province.

Thanks for this great video! People are always howling about how there isn’t any good cheese in Ecuador. Maybe do a video that profiles the good cheeses that you have found all in one video.

I have to say I visited two producer owned cheese shops in Cuenca last week, one was the Saraguro co-op and the other was Quesos El Bueste, which I think may be in Cañar. But both had great traditional cheese and also were doing some really cool innovations. That day I didn't have enough to splurge beyond the queso con aji at El Bueste and a regular at Saraguro but they are experimenting with brie and manchego, aged, and blue cheese. But queso de hoja is still a classic.

I agree with Jae Mackay. You also might include the different cheeses that one can find in the cost and in the Oriente. It will be quite interesting to show the variety of cheeses that there is in Ecuador in the continental regions

I think you've officially provided the best lay-person explanation for Nata I've heard. In the past when I've asked, I received an affirmative that it was dairy, however you've provided a very helpful audio and visual.

Creme fraiche isn't common in North America so I think some people have a hard time figuring out what it is because it's not cream cheese nor sour cream.

@@ayngelina ,Ambato es mi ciudad y ahí se hace el mejor pan ,en leña y con manteca de cerdo, ojalá lo pueda saborear y también las tortillas de papa o como nosotros lo llamamos llapingachos😋

Great video! Dulce de leche goes by many names. Manjar de leche, manjar blanco, and cajeta in Mexico. There are regional variations, and people will tell you that theirs is better. The one that really stands out from the mix is cajeta. It has a burnt sugar taste to it, whereas most other varieties don't taste that way. But essentially, it's all the same thing.

I'm hoping to go back to Mexico in 2023. I've visited maybe 10 times and have written about it but never shot videos so I'm putting cajeta on my must eat list!

I think it's easier to be vegan in Ecuador than to be gluten free. They are lots of dishes that are traditionally vegan. There's even a vegan ceviche using palm hearts! I'm actually trying to get the recipe for it as its really good.

Ufff se ve todo delicioso, que rico! Si pasaste por Cotacachi espero hayas probado las carnes coloradas. Otros platos típicos de Cayambe esta la sopa uchu jacu que es una sopa ancestral de más de 300 años, la sopa chola mikuna, las habas tostadas, la papa tanda, las tortillas de chuno, el ceviche de hongos de pino.

Just prior to the pandemic, we found a few good almuerzo lugares en Cuenca. Several were as low as $2, and like I believe you said, others went as high as $4. What you showed on the plate you received for el segundo might have been the most generous portion we've seen thus far. I'd say it was well worth $5, and you were smart to plan on sharing. Did you expect it to be that plentiful? I agree with you, I'll take the salad over rice anytime. From a classic almuerzo perspective, the salad looked delicious!

I love salad, and I like to eat a lot of vegetables. It just makes me feel better so I love the culture of veggie juices in the market. I just tell them what I want. For quality of almuerzo I really like El Tunel, people complain about the portion sizes but it's good quality. And actually on this vegetarian video coming up I thought some of the places had fantastic portion sizes and good prices.

@@ayngelina Is El Tunel in Cuenca? When you say folks complain about the portion sizes, are they looking for more? I ask, because we often felt stuffed with the typical almuerzo offerings, and saw a few locals skip the soup and went right to "el segundo". I think instead of $2, they paid $1.25. One told us it wasn't the price, but it was just too much food, and she was afraid of falling asleep when she went back to work. I'd be thrilled and willing to pay $5 for the plate you showed us in this video. You're doing consistently fantastic and beautiful work!

Those are pork rinds soaked in the potato soup. Locro is 'soup' in quechua.

yes cuero and chicharron are both pork skin but prepared differently. But both delicious! 😍

Hi, Very interesting again the way you explain the origin of the food. The cheese in the large leaf is something I want to try. Finding good bread, and cheese, in Ecuador is still my main problem. A question, I often notice that there is a lot of left over food after your presentation. Do you take it with you? Please don't say you leave it on the table...

Yes! That's why I always have someone else eating with me everywhere I go. Andres and I always order one almuerzo and split it. We only order our own if we aren't shooting a lot of food in a video. I shared an achira cookie in my Yunguilla video. It's such an interesting plant. And it's funny that this video is primarily about the bizcocho but really sparked an Ecuadorian cheese discussion. I'm in Cuenca and both Quesos Saraguro and Quesos el Bueste have shops here and are making both traditional cheese and innovating. So Saraguro is known for its Queso Andino but in the shop they also had manchego and brie and El Bueste had so many I wanted to try. I'm also trying to get out of a goat cheese farm outside Cuenca that has accommodation hopefully soon. Just waiting for it to be a bit safer to travel. But I think all this discussion may warrant an Ecuadorian cheese video.

There seems to be more of a coffee culture for sure. I'm sure it exists but I haven't been anywhere in the Andes where someone gave me instant, whereas that's almost the default along the coast.
