For the trunk release you can just buy the oem kit and install it.

The #1 is fixable. Just buy a trunk and gas cap release from NA8 and put it in your NA6. That’s what i did to my miata. A lil bit of work to do but very satisfying once it’s done

Steering wheel: the ONLY AIRBAG. Going to a Nardi steering wheel, for example, there goes the airbag.

Install a central locking kit to fix the boot issue, change the steering wheel for a more attractive one and open windows slightly or use the fan without ac to keep (relatively) cool. Boom fixed 3 of your issues.
