INGREDIENTS:
🔹 2 Italian eggplants or small globe eggplants
🔹 ¼ cup tahini paste, I used Soom tahini
🔹 1 lemon, juice of
🔹 1 garlic clove, minced
🔹 1 tablespoon plain Greek yogurt, optional
🔹 Kosher salt and black pepper
🔹 1 teaspoon sumac
🔹 ¾ teaspoon Aleppo pepper or red pepper flakes, optional
🔹 Extra virgin olive oil
🔹 Toasted pine nuts for garnish, optional

As someone who prefers finger foods, heavy snacks vs. big heavy meals, this looks amazing. I could eat hummus all day everyday but I have to make this and put it in my rotation.

I love this stuff. Very similar to my recipe except i usually throw a few eggplants on my actual wood fired offset smoker when im smoking meats and it get some extra smokiness. Going to try a little sumac which i have in the cupboard and the greek yogurt to see how that changes it 😀

Sounds like a weird question, but do pine nuts taste like pine trees? I mean have that pine-y flavor? I’ve never had them before but don’t really like mint/pine flavors.

Not if it’s poisonous! The sumac in our spices come from the Middle East

Better to make the Tahini separately so you can then control the amount you add to the aubergine.
