I made Mexican Rice the other day and it came out so good. In the past, I had issues with it being too wet or sticky, or the taste being off, but I found out that you don't need to add an exact measurement of water, just enough to cover the rice. And yes, letting it set for 10 minutes off the heat makes a difference

Once you put the water and tomatoe sauce I usually stir and stir until it hits a boiling point. I cover for 10 minutes on low heat and then stir it one more time. Cover and Let it sit for another 3 minutes on low heat. This will help with the tomato sauce spreading to the entire rice and nothing rising to the top

I do not recommend stirring, it will make the rice release starch and make it gummy. Just let it be, one or two stirs is fine, but more than that can be a disaster.

I heard that the workers who gather the rice aren’t allowed to go to the bathroom sometimes so they pee on the rice! And that rodents walk all over the rice too!!! Maybe NONE of that is true but i still wash the rice always!!!!

I love Basmati rice in my household Jenny it is so multi-purposeful. Basmati taste so good too is so flaky and has way less sugar than Jasmine. We use. Basmati in all our Indian and Middle Eastern recipes so good.

I also switched to basmati rice for cooking plov; the main advantage for me is it easier to not overcook and it still tastes very good on the next day and even the third day. With jasmine rice even the next day plov was already not enjoyable for me 🍲

No rinse. If you add oil to wet rice, it will cause popping and flying hot oil is dangerous. Brown the rice in the same oil the onions and garlic was cooked in, plus a little more to ensure there is a uniform coat on all the grains, then add all the powdered ingredients to that as it browns, stirring constantly. Blend the cooked onions & garlic with the tomatoes to make sauce, stir that in for a minute to coat the grains and cook a little before adding the HOT water. The Bullion isn’t necessary if chicken stock is substituted for water. Add a small pinch of cumin which isn’t mentioned in this recipe because the sprig of cilantro is used - add both anyway. The water is added last simply because all the flavor of the ingredients remain concentrated while marrying with the rice grains and yields a better flavor.

En fuego alto, hechas aceite y cebolla y revuelve un poco. Luego hechas el arroz y revuelva hasta cubrir el arroz con aceite, no se dore. Hechas agua hasta que cubre como media pulgada arriba del arroz, hecha sal al gusto y deja que se hierva un poco. después baja el fuego un poquito, como entre alto y medio (aqui es cuando me gusta agregar cilantro) no lo tapas. Cuando veas que se ha acabado casi toda el agua, tapa y pon el fuego muy bajo y lo dejas unas tal vez 10 o 12 minutos 🤷🏻♀️ La verdad no se cuanto tiempo ni se medidas, hago esto aunque la cantidad de arroz cambia y solo se cuando se ve listo 😅 Espero que esto te ayuda! 🙏🏽

No. After adding broth, bring to a boil and then simmer. I usually simmer mine for 15 minutes. Also, for every 1/2 cup of rice = 1 cup of broth. Hope thar helps.

Yes, but the garlic should be fried for a while before you blend it w the tomatoes. Then you put back in and fry the tomatoes mixture for a few minutes before you put the Very hot water in. That's key. Hot water!!
