sugar loaf endive is my favorite cultivar.. technically its an escarole... we blanch it the same way you blanche cauliflower,, by wrapping its outer leaves up over the head and elastic banding it for a week, .... serve it with oil and vinegar dressing but the trick is to serve it with piping hot freshly boiled potatoes, .. hot potato... cold endive... yummmy

Us Greeks eat endive as a dish called 'horta' you can look up a recipe. But essentially all you do is boil them in water until soft, strain and add salt olive oil and lemon (add salt to the water prior to boiling)! Yum

I appreciate your couple of recipes. It's hard to get into greens a lot of the time if you don't know what to do with them. "Eat raw, eat cooked!" isn't a recipe one can practically follow, so knowing to add some dressing or an egg really helps.

I grew up in Italy and our favorite salad was a type of leaf chicory finely shredded and with just olive oil and vinegar and salt. (cut and come again vs. heading). I found the seeds at a company called seeds of Italy online. They have many varieties. and so far in testing them my favorite is a roman variety of curled cutting chicory by Franchi seeds called " Indivia Riccia romanesca da taglio" and the packets have tons of seed to keep you going for quite some time.

I grew a broadleaf endive (what we call escarole) last fall and I am going to try to collect seeds this summer so I can grow them again. My girlfriend likes dandelion greens and escarole has a similar use. She loved it. Can't wait to grow more.

hey there mark. my wife and i just bought a home and i have been thrilled that we can finally start a garden thats fit to last. ive watched tons of your videos and im going to start a compost using the hugelkulture method,then building a 6x3x12 raised bed. We live in western central florida, only about 300 ft above sea level ( if that matters). When the compost is ready, hopefully by this winter, what would you suggest that we grow first? we have limited sunlight, only coming from the west from around 1 pm-6pm. mostly canopied by large oak in the morning. i would appreciate any feed back. Also , your videos are great and i admire you doing what makes you truly happy, i myself am on the same path . it feels great, better each day. love what you do. peace

Nice tips mate I just cut the tops off all my salad. It grow back for next time. I have been saving salad seed from every new variety I get I have six or seven with some mustard's mixed in I plant a tray than do a few plugs close together. or do a mass planting in the raised beds. I find it a great way to do it you get a good mix at a snip ;-) I was watching your quail processing vids the other day I am in hatching season now though my last hatch was a bugger. I started too early collecting the eggs. The boys were not ready... Fingers crossed they are now lol. Andy at MC Dowel manor manner recommended the processing vids you did a great job. Gemmie Skye Maybe go heavy on the watering? I know insufficient water can make other leafy vegetables turn bitter. I haven't tried endive yet.

It does help yes as the bitterness will get more intense as it matures but the plant has a natural bitterness similar to the oleuropein in olives. Blanching, cooking, soaking in water also helps reduce the bitterness :)

Watch OUT > they are making these Escaroe or Chickory greens (that may be also called "Endive") GMO's in 2018... Horrible experience that I've had 2 nights ago... these GMO Escarole (also called Green Endives), also the Chickory Green lettuce...that come in the GMO variety> WITHOUT LETTING us KNOW > are no longer looking like they have pearlescent stems with lots of shine... PERHAPS the only way to go is to buy at the Farmers' Markets. HORROR. I still feel sick 2 days later...had a very bad feel all throughout the night.
