Meat is forbidden in cig köfte, but if you make it at home, you can make it with minced fat free meat. I like it with meat, but everything has to be fresh and clean. You cant sell those with meat inside, because it has to be eaten fast... So there is no meat inside if you buy it outside.
@Deccoyi

I don't understand why people are going crazy about balık ekmek. You shoul've added kokoreç to that list instead of balık ekmek :) Making a burrito is a way to eat the çiğ köfte. There is no meat in it. Its made out of bulgur. Its not cooked. You just knead the bulgur with spices, onion, tomato paste and stuff. You have a weak list :) Here is better options to check out: İskender, Beyti, Kokoreç, Etli Ekmek, Cağ Kebap And Breakfast yeah real breakfast(you probably had in hotels).

You can find BKE (Bursa Kebap Evi) and HD İskender in every shopping center. Its easy to cook it at home too, in my opinion try Cağ Kebap which is impossible to cook at home. İskender is just Döner served with milkbutter and yogurth nothing special if you have ingredients 15 minutes enought to prepare.

ı think in America and western countries people eat the yogurt only with sugar. The origin of the " yogurt " word is turkish , it is comes from " Yoğurmak " verb , its mean is " impasted - Yoğurt " so there is many types of yogurts and cheese types exist in Turkey. You can try Kars - Kaşar cheese , Ezine - Tulum Cheese , Erzincan - Tulum cheese , Burgu cheese , Van - otlu cheese etc.
@wyk13
@wyk13 6 жыл бұрын
Well, I wouldn't be hard on them. maybe it is just the style of the yogurt you are eating that is greek, but yogurt in general(I mean the proccess of how it is made) was definitely found by Turks. Another fun fact btw; coffee was first brewed and drinked by Ottomans in Anatolia, before then it was just being chewed.

Original Çig Köfte is made with a mixture of minced meat, bulgur (which is made from dried boiled wheat) and some strong spices. The surprising part is it is not cooked with any heat at all. "Çiğ Köfte" literally means raw meatballs. It's just kneaded for a long time until it's kinda cooked with the effect of hot spices. That's why it's pasty. However, in the recent years most places are not allowed to use meat in that because as you'd think raw meat hard to maintain fresh and clean, and it can be risky for health in some conditions. So what you ate probably didn't have any real meat in it, it's probably just made from bulgur and spices. Wrapping it like a burrito or with lettuce is also how we eat it, so it's fine. When it's hot (and it usually is, especially when there's real meat in it) our traditional drink "ayran" is really good for easing the burn :)

I must say when it comes to Çiğköfte not every place gets it right. But I guess this is true for all food around the world. Just because you're in Turkey doesn't mean you're gonna find decent Turkish food at every restaurant :P BTW, you can eat it like a burrito as well it's perfectly fine, actually some places even sell a burrito version. I'd just say that keep on trying, find different places to eat but obviously if you still don't like it after 3-4 tries then it's safe to say that you don't like it :) I've seen people suggesting İşkembe or Kokoreç, it's not something that everyone likes even in Turkey. It's a little bit more of a unique taste. But on the other hand I haven't met a single soul who doesn't like İskender.

Çiğ köfte must be actually uncooked mince meat. But as it is hard to preserve ,it is not allowed to produce and sell in restaurants. Original çiğ köfte is made of mince meat blended with hot pepper and different herbs. What you have eaten is tomatopaste,bulgur(crustless wheat),salt,blackpepper,pomangrate souse,lemonjuice etc.

Çiğköfte stands for Raw (çiğ) and Meatball (Köfte) and as the name says it's raw minced meat with spices and what we call 'bulgur' wich is kind of like pounded Wheat
@safiyeserdengecti7487
@safiyeserdengecti7487 7 жыл бұрын
The deal about Çiğköfte (basically means "raw meatball") is that it contains really fine bulgur (cracked wheat, couscous) and raw ground beef originally. It is kneaded for a long time with onion and various spices so that meat can be cooked with them a lil bit without any heating process. But you cannot find this original version in restaurants as it was banned regarding hygiene concerns for raw meat in it. You can only find versions without meat, only with bulgur and spices, which is actually what I prefer (Also the burrito style) :)) Bit of a long explanation, but hope you find this useful :D

The best Turkish fish you can probably find in fish restaurants or in "Meyhane" which literally translates as "house of alcoholic drinks". Don't go to places crowding with people that pile up huge chunks of baklava for a good turkish dessert, rather try to find places that specialize in different turkish desserts, like "muhallebici"(pudding-like desserts out of milk) Turks not only eat syrup and pastry as dessert but they have a whole family of desserts made out of dairy products which are light and not less delicious than the ones with syrup. Last but not least, go check out some "esnaf lokantası" which sell some of the best homy comfort food, food that is slow-cooked with its water. But again don't go to cheap places rather try to find some good old school "esnaf lokantası". Having said all this, I could say with honesty that even Turkish fast food is way better than mcdonalds and its like.

Yes, the fish sandwich is usually served with bones which I also dont like. And it can be also quite dry without sauce. But it became a kind of a stereotype if you go to eminönü. I guess almost everyone ate at least once a fishsandwich when passing the barbeque boats. Actually you ate the cigköfte right by srapping it in the bread. If you woulf ask for a cigköfte to take out, they would do exactly the same for you. Taking some cigköfte, some vegetables a shot of lemon an pomgrenate sauce and wrap it in bread. And as you recognized ...yea Ayran is Yoghurt with water and salt. Depend on the way the do it can be also very creamy. But you should not listen to much to the comments :-)

Original çiğ köfte is made from raw-uncooked minced meat and it takes a lot of hot pepper and at least one hour of kneading. That basically puts raw meat into edible form, i.e. almost cooked, by help of the hot pepper. Real çiğ köfte is very hot and spicy. That method of preparing meat is said to be inherited from ancient inhabitants of Anatolia. Today using raw minced meat in commercial çiğ köfte is banned by law. So what you ate is a çiğ köfte replica :) Real çiğ köfte is now prepared in private only. But I doubt you can eat that too.

just a minor correction its balık ekmek(with k ) and normally when u buy balık ekmek the cook takes all the fish bones out , for your unluck you got bones in it :) and for çiğ köfte its made from mainly cracked wheat by being kneaded for a really hard and long time with spices , ayran = yoghurt + water + salt mixed up thats all ;) +WΔY ΔWΔY

also the reason the ayran was thinner is because its homemade. and probably from homemade yogurt.

We usually don't eat the bones in fish sandwiches, actually it depends on how big the bone is.. Other than that, i prefer warning the guy preparing the sandwich not to choose the fish still containing bones in it

You guys are so fun to follow and watch. :-) By the way, it is not called "burrito" in Turkey / Turkish; but "dürüm." And yes, we roll the "lavaş" round the çiğ köfte, too. (P.S.: Lavaş: It resembles tortillo. But it is different.)

With the exception that ayran,turkish coffee and tea; as Turkish drink there is a 'Boza' . I think, you should taste and they are so delicious. With my best wishes..

Cig Kofte is raw meat mixed with bulgur and a variety of spices and it is knead profusely until it is cured, another version of cig kofte is steak TATAR, and lebanese call is Kibee, but most Cig kofte in istanbul these days is actually vegetarian which i dont really like much, Cig = raw Kofte = meatball
