Canning Sweet Potatoes takes weeks to complete at Deep South. Our sweet potatoes are stored in a cooler. I process one or two canners at a time. Today the noise in the background prevented me from talking a lot, so enjoy the brief tutorial. These sweet potatoes in a jar will last up to 5 years. I use them for making pies and desserts. They can be opened and eaten right out of the jar, too.

Good morning. I absolutely love your cutting board! I never thought that a paper cutter would have a better use but you two found it. Your sweet potatoes look delicious. When I watch your channel I realize this is exactly the way we’re supposed to be living not running ourselves ragged making rich men richer. No wonder we’re sick and diseased, the processed foods and chemicals are killing us. If we lived like Danny and Wanda, the rich men ruining the world wouldn’t have the control that they have because we would have never fallen into their traps. Thank you for sharing, I learn more from your channel then I ever did in school.

Ms. Wanda, Can I give everyone a tip on canning? When I can things like the sweet potatoes as an example I put my liquid in the jar first, about a little less than 1/2 way up, and add liquid as I'm filling up the jar being careful not to overfill before getting all the potatoes in. This keeps it from getting air pockets that can be difficult to get out afterwards. It's much easier to 'burp' the top section of the jar than trying to push the debubbler down to the bottom to burp it with things as hard as potatoes. They don't move around so easy. I forgot to mention that I pack them in with a tamper. -Frankie H.- Btw... the chickens are doing great. We love having them.

Wanda, a little tip for you. Try putting in 1/4 jar of your syrup in the jar 1st and then add your potatoes then just top it off if you need more. This will help the debubbling process since potatoes are kindof hard to debubble. It helps, give it a shot and see if it's better that way for you.

Few people are aware of the value of sweet potatoes. Last year we canned 90 quarts of sweet potatoes. We have another 140 lb. this year that are curing. We save about 60 lbs a year for roasting, and still have some left over from last years harvest. We also had 340lbs of white potatoes and freeze drying, and canning those too! Making freeze dried mash potatoes today 😋 Great video Wanda, very informative for those wanting canned sweet potatoes. We add only sugar to a few jars each year. Ours are so sweet we discovered sugar made them too sweet sometimes. It's definitely a super food we enjoy year round 😋

Thanks for a great video, Wanda! I've got to tell you a funny story. When I was going to CSU in Fort Collins, one of my four roommates cooked some navy beans and a ham shank in my pressure cooker -- (my mother and both grandmothers were canners and quilters). But he didn't wait until the pressure was gone (like I had warned him to do) before trying to open it. He created a mini explosion, and we had beans all over the kitchen walls, ceiling, windows and doors. It took us a month to completely clean up the mess. Fortunately, he only got a 1st-degree-burned face. I thought you'd get a kick out of that story. God bless and protect Deep South Homestead and all who dwell there!

I have 4 trays of smashed sweet potatoes in the freeze dryer right now and 4 more trays ready in the freezer. Canned 18 pints of white potatoes yesterday. I really enjoy watching your canning videos. Thank you.

Been canning since I was standing on a chair to reach the counter in my grandmother’s kitchen. We only canned the same 10 recipes every year. Sweet potatoes wasn’t one of them. The last few years my sister and I have been expanding our canning & this year we even canned things from our own gardens (some things we’ve never eaten before & have learned we love them). Already planning next years garden and sweet potatoes are in the plan. Thank you for sharing. This is so easy.

The canning time for pints of sweet potatoes is 65 minutes, not 75. Your sweet potatoes look beautiful! Thanks so much for sharing this. I can my sweet potatoes a little differently, but I love to see how other homesteaders do theirs.

Is that a machete you were using to cut the sweet potatoes? What a clever idea. I ordered 1/2 bushel of sweet potatoes from our local farm. Never thought about canning them, but after seeing how easy it is, I will definitely give it a try. Thanks for all you do. Blessings.

I live in NC and the sweet potato county capital of the world. I've never worried about getting sweet potatoes to eat. This year our farm was planted in sweet potatoes and today they harvested them today. They only got the number ones and left the rest for waste. The field is around 18 acres and was planted with the Covington variety which is a very sweet variety. I have never seen them spray them with any chemicals. They only plow them and fertilize them once or twice with 6-6-18 vegetable fertilizer. It's a shame they leave most of the crop in the field and only get the selects but all the locals always have plenty for a winter food source at no cost to them.

Good morning brother it happened just as I thought it would. We got 1 1\2 inches of rain in 20 minutes. Washed gullies everywhere. Then rained another two inches in the evening. I will probably have to replant my cover crops. Everything now is extreme no normal rains anymore.

I have been told you can also cook them done in an Instapot and cream them. Put them on freeze dryer trays and process. Grind them to powder; for like mashed potatoes; and store in jars vacuum sealed. Then add simple syrup to reconstitute. I’m sure they would take up much less space. I’ve canned them like you and they are delicious!

Good morning from SE Massachusetts 48 degrees. First year growing sweet potatoes. They grew small to medium sized. We cooked and mashed them then portioned them out and put them in the freezer. They won't last long ! This year was experimental to see how they would grow in our soul. Next year should be abundant enough to can. I love your work kitchen. Your video was excellent. Would love to have a preserving kitchen with a pantry spot. Have everything in one place. My kitchen is small and stuff stashed wherever I can like a bedroom closet 😂.

We don't have a cellar or basement, unfortunately. All we have is a garage that gets really warm, sometimes 85 degrees and a small room upstairs. So I'm not sure which is best to keep canned goods. I would say upstairs is a no brainer due to temp, but lugging food up and then going to get it when it's time to fix supper doesn't sound fun. What did people used to do before air-conditioning and such if they had no cellar or basement? Seems like they would have had to keep them in places that were warmer than what they would want, right? What are your thoughts on keeping food in a sometimes warm garage. Thank you for the demo. I learned a lot.

I have a few weird shaped ones that I harvested this year, I might try this to see if I can get it done thanks for the tips. One question is when you are putting the pieces into the bowl of water, is there anything in the water such as lemon? When you’re using the canned sweet potatoes are you usually utilizing them for mashed potatoes?

Hey deep south homestead. Because of your videos, I started canning again, 45 years later. Also bought a pressure canner and scared as I was, I am loving it now. So, here's my question. I have blue potatoes and gold rush and Irish cobbler. Are they good to can? Nowhere have i seen anyone canning anything but red and white and russet. Thanks.

What do you use the canned sweet potatoes for? Only for pie? Which would be fine! Mine got very mushy..

That looks like my pressure cooker. They say you cannot can in a pressure cooker.. the old woman that gave me it (lived to 104) said you can.( No pun intended) Anyone?

That is 16 qt pressure canner. You can cook in pressure canner as well as can, but you cannot can in a pressure cooker. Look on yours near handle for info such as model then go on line to see what you have . It may well be canner/cooker.

2 questions. Can a sugar substitute be used for a diabetic? Can they be canned with a little salt, opened, drained, and roasted on cookie sheet? Thanks

Do you have to let the sweet potatoes cure before you can them? This is my 1st year growing them and I want to can them. Just dug them yesterday. Thank you
