They buckled because the lids get tightened to tight. They need to be finger tight:)

I wondered if we were tightening too tight, but Danny always puts them on pretty tight. These also were the lids that came with the jars. They were Ball. First time we have ever had lids buckle. Guess we will just finger tight from now on. THanks, Linda

When I saw her tighten that lid I knew it was going to cause a problem. The jars need to "exhale" for lack of a better term, during the canning process and if the lids on too tight, they can buckle. Or break your jar.

Linda is spot on you tighted the screw bands way too tight and also you never put a plastic implement in your filled jars to take the air bubbles out of your product in the jar

Wow!! I am glad I came across this video. I just saw one that said cook the cubed sweet potatoes for 8 MINUTES before putting in to the jars to pressure can!!?? I figured that was way too long. Thank you for such great detail in your video. Starting to get the potatoes ready.

I remember watching my Mom do this when I was a kid and my "job" was to listen for the lids to pop down and pull out the jars that didn't seal right. She taught me Exactly how to can veggies and I use her knowledge every time my Wife and I do it!

I've been canning for about 40 years and have never lost a jar to a lid buckling like yours until this year. I bought several cases of new Ball jars this year. While canning pork shoulder, I put 8 pints into my pressure canner. When I went to unload, there was one jar that had a lid that was buckled just like yours. The next batch, two of the jars came out with buckled lids. At that point, I took all the remaining lids that came with the jars and tossed them into the trash. Instead I used lids from a box of lids I had and the remaining canning went fine with no loss. That was early this summer and I haven't had a problem since. Because the problem seems to have been with the lids on new jars, my guess is that the machine that puts the lids and bands on the jars at the factory must have caused a defect in a number of the lids.

Thanks! I just canned sweet potatoes for the first time. We usually just cure them and let them sit in the basement (which we did with half of them). However, this is a great idea for those that were damaged by the pitch fork or the potato digger on the tractor.

I have been canning 60 (and more) years. The lids they sell now are lighter and easier to buckle and fold. I have been buying my lids from Lehman's or Cane Creek Market in Tennessee. They cost less (but you have to buy in quantity), and are heavy like the old-time lids. I think Kerr wants you to buy the 'tightening tool' they sell, to keep from buckled lids.

I’m in Panama City Fl. And for 6 weeks we’ve had about 1-2 inches of rain almost every day. Last week I dug up about 180 pounds of sweet potatoes. Some were almost black from sitting in mud. The meat looks good so I’m, for the first time, canning 75 quarts. I can’t thank you enough for this video! I was wondering about the pre cook time and you answered my questions.

Danny, I have had the same issue with tops buckling and I had placed the rings on to tight. But our PIG loves sweet taters and she is an Italian Mastiff named Heaven. thanks for the videos. I planted the purple sweet taters this year and need to dig some to give them a try.

I have canned many things but never sweet potatoes.. I love the light colored sweet potatoes but only get them here around Thanksgiving and Christmas, the rest of the time they are the deep orange ones. I don't know why we can't get the others all year round. After seeing this video I think I will buy 20 lbs when they get here and can them. Thanks for the video!

You can get the pressure gauge on your canner checked for free at your local Cooperative Extension Office. Every county in every state offers this service. Also, another reason that jars may not seal correctly, is if you run water over your pressure canner to cool it. Let the pressure come down on its own, and then take off the lid. You've got some beautiful sweet potatoes!

my sweet potatoes I can I boil till just brush again them the skin comes off but never been mush but really doesn't matter as we only eat them in pies. we also put a lil orange juice in the can and put sugar water on ours. you are right pigs love them I mix all of my waste veggies with waste milk. nice video

It isn't USDA approved but I use the old George Washington Carver method of raw packing with cold water and water bathing (not pressure) them for 1 hour. I've had good success with it. Google George Washington Carver Sweet potatoes and you will find some very useful and interesting reading.

I believe I know what caused the buckling lids; I was watching her tighten the lids; she is making them too tight; I was doing this too this year; I was doing this too; they changed the lids this year; just tighten until there is resistance.

When I can potatoes I do not precook them, just put them in the jar, add my liquid and process them for the required amount of pressure and time.

yes you can puree it and make like a fruit leather - and then run it through a coffee grinder and make powder out of it - then you can rehydrate when ever you want

I've been canning a lot this summer and I'm getting some buckling exactly like that on some of my lids. So far, they have all sealed. It seems to me that the lids and rings are both a little thinner or more pliable. The rings even make a different sound when you drop them on the counter. I'm not tightening these any tighter than I ever have before (as I'm sure is the case with Wanda) and I've been canning for years. I'm thinking they have either taken a tiny bit of material out in the manufacturing process or added an alloy to make the material go further in the process. All about the $$$$.......still the best metal rings/lids out there in my opinion.

I haven't had anymore buckle, but I have noticed that the lids are thinner. Danny tightened some of these after I did and he may have tightened them too much. We only buy the silver lids. They seem to be a better lid.

The buckling only happens to me on the lids that come on a brand new box of jars. Take notice and see if that is the way it is for you and report your findings. I am ready to not pressure can with them and use them in storage or waterbath only.

Hi Wanda and Danny! My hint is to use peanut butter on the starch line around pot sides. What is your opinion on leaving rings on in storage? I recently was given 3 boxes of Mainstays lids, but when I (thank God) read some reviews before using them, I saw that many people had buckling lids in most all their canning batches! Most commenters were absolutely, and rightly upset to say the least! The thing is that some reviewers and commenters said that the lids are Ball company made, and the Mainstays are the same manufacturing. Mine say made in USA. needless to say I will not be using them.ps, I got my DSH cookbook the other day!Yay!!!

I am glad the book arrived safely. We only use Ball lids and these were Ball, but they came with the jars. This is the first time we have ever had that happen. Could be we tightened too tight. I haven't used the mainstay but have heard that they are all made in the same facility. Thanks

I love, love, love sweet potatoes. I keep trying to grow them, but we have so much rain. Just yesterday we got 4 1/2 in of rain. Sometimes it rains for a week at a time, but I keep trying. How long do you wait from harvest to canning? Do you have to wait a couple of months for them to sweeten up?

Google says what causes lids to buckle: During canning, air trapped in the headspace between the bottom of the lid and the top of the food is forced out of the jar. When lids are too tight, the air cannot easily escape so it forces its way out by deforming the lid. This leads to the buckling or crinkling effect.”

The lids don't need to be cranked tight only finger tight. That's what makes them buckle up.

I am a beginner canner and watch a lot of your videos. I can sweet potatoes for the first time yesterday with just water and tsp of sale in each quart. I made sure that the white peel was off of the potatoes. This morning I get up and the water in the sweet potatoes is very cloudy looking. What did i do wrong ?

Canned sweet potatoes are great to use in sweet potato casserole and sweet potato desserts. You can use them to make candied sweet potatoes. Less time because they are already done. Thanks

Yes Mark, we fry the canned okra. It is awesome. Check out the video that we did a few days ago. We also did another 2 weeks ago. Good canned okra that can be fried. Works great in soups, gumbo etc too.

Hi, I AM planning to canned sweet potatoes. I do not use a pressure canner. I have a regular water bath canner with the wire rack inserted inside. How long would you suggest I let the sweet potatoes cook in the water bath canner. Did you put anything like salt or syrup in your jars. I want to can with as less salt of sugar as possible. Do you have to use a pressure cooker? i got a caner pot which is large and good for this. I heard that is you are not using vinegar or salt that pressure cooking is a must? How long did you pressure cook the sweet potatoes?

Yes, you have to use a pressure canner on vegetables. The water bath canner is for jellies, jams, and tomatoes. Sweet potatoes take 1 1/2 hours. They are soft when done, but we use them in deserts and you can make candied sweet potatoes with them.

I haven't weighed them. I just know how many to cut up in a certain bowl I have and if there are left overs, I cook them and make a dessert.
