It has a lot to do with the warmth of the puff pastry. If you chill it right before baking, 12:46 12:49 it will "puff" more than if it's at room temperature.

Sometimes it depends on the filling, some filling takes longer to cook than the pastry. It's common practice in baking to use frozen method.

Enjoying watching these since there is no talking and you mostly speed things up. On the blueberry puff pastry tart they plopped something white on top, but not sure what that was as nothing came up on the screen. Was it ice cream or cream cheese? Does anyone know?

Столько потратила времени, хотела найти хоть один комментарий, который подтвердил бы что уксус не испортил. Ни одного, все восхваляют, хотя никто еще не испёк. А я знаю, что мне пришлось выбросить уже испечённый пирог из-за того, что я соду погасила уксусом. И перелила уксуса. Теперь я всегда пробую, чтобы небыло кислым. Соду гашу в мисочке отдельно. Потом добавляю в тесто. Если не растворилась сода, добавляю уксус, если кисло, добавляю соды. И лишь потом выливаю в тесто. Мне не нравится разрыхлитель, вкус в изделии, буд-то туда добавили накипь из чайника. Несколько дней преследовал этот вкус. И вот теперь мне говорят, добавь две столовые ложки уксуса, без гашения содой. И это будет вкусно. Ни за что не поверю. Испеките кто- нибудь и скажите мне, пожалуйста, что я ошибаюсь. Я буду ждать.❤

I’m not sure by what you mean by healthier puff pastry but with most you can change ingredients to make healthier. Except the pastry part. I’ve never seen a true pastry without flour or white sugar but I’m sure there are a few.
