Every year for the past few years I get a lot of tomatoes more x than your harvest. You should get a slow cooker to cook them overnight, then you can cook it down. I can most of them, make pickle like you make, make salsa, sweets and hit relish and at the end of the season, I have green tomatoes and I make green tomato pickle. Enjoy your tomatoes rest of the year. The taste doesn’t change when you cook in slow cooker. Trust me. I also make pasta sauce.
