Excellent information and production values. Kudos. Regarding Mizuna, it is astonishingly productive. I have a large square pot on my balcony that produces more than my wife and I can eat. I harvest a few leaves every day separate the leaves (technically leaflets) from the stems, chop the stems into one inch long pieces, and serve in salads with lettuce, parsley, and green onions, all of them grown on my balcony. By the way, every year, I allow one mizuna plant to go to seed. It takes a while for the pods (similar to those of legumes) to fully ripen, but when they do, you are rewarded with enough brown, round, pea-shaped seeds for a large, in-the-ground garden -- all from one stalk.

Have you tried this wonderful leaf lettuce in Switzerland it is called nüsslisalat, but in the US it goes by mache or corn salad? I don't understand why this isn't a thing here in the US. It has a slight nutty flavor and is delicious served with slices of boiled egg and a light vinaigrette dressing. We are in zone 7 (Virginia) and planted ours in late summer. It did amazing over the winter and we continually harvested fresh lettuce even after a few snow falls and low temperatures. Give it a try.
