Never ever microwave left over rice. The microwave brings out a poison. Look it up Always use an oven , toaster oven or stovetop. Please look it up

I'm recovering from trauma that has affected my memory (the death of my son AND my son-in-law within 11 days of one another). They were both in their mid-30s. So so sad. Back to the point: I've cooked my whole adult life not only at home but for a living. Suddenly now, I can't put a simple meal together, and can't even begin to start a menu or grocery list! So overwhelming, frustrating, and stressful. I'm also diabetic. Nutrition is EVERYTHING when it comes to controlling blood sugar. Needless to say, my blood sugar is now completely out of control, which affects my memory too. It's a vicious cycle that must be interrupted immediately to avoid severe health consequences. Your sheet pan dinners are an absolute Godsend to me!!! Simple, inexpensive, nutritious, no cleanup. This is the first time I've got real hope of pulling myself out of this 'death-throw'. Thank you so much! I don't know what else to say except keep up the great work! You don't know what a positive impact you're having on people's lives!

If you're going to cook all those things within say 5 days they don't all have to go in the freezer either. They can be in the fridge because it saves time instead of taking it from the freezer. You've inspired me and I'm going to the grocery store as we speak in a minute

Nicole, love your recipes! I was wondering if you could do a series or video showing how to meal prep and freeze meals for 1 (or 2) person/people? What kind of containers or bags are best, how to keep the money low, ect? It would be nice to get some ideas from someone you could trust that knows how it's going to taste, the correct temps to cook at, just everything! 😂 Love your videos. Your cooking style matches mine. All of the videos I have viewed show dishes I would actually prepare and eat. I made the frozen air fryer salmon for dinner with an improvised glaze since I was out of Dijon. Served it with a zapped baked potato and microwave steamed broccoli. The whole meal took maybe 15 minutes. Thanks so much for great ideas!

The Greek meatballs with Turkey are so tasty!! It’s very challenging to get a Turkey seasoned well and I think the feta and lemon zest are the key ingredients to it. I’m a teacher and always looking for tasty recipes for lunch instead of sandwiches. I love leftovers!! Thank you Nicole!!

I help my son and daughter-in-law with meals; both work and have somewhat different end of shift times. These preps look absolutely easy and amazing. I am going to have to adjust a bit being my son is a insulin dependant diabetic and she's somewhat keto, so I'm sure I can find a happy medium in all of these! Thank you!!

I freeze rice often. It does get drier, so add a little water when heating it as she suggested.
