OK. I'm almost 75. I've stopped the video before you're even done with the first recipe because this brings back MEMORIES!! I had a four quart Rival crock pot where the innards were fixed and the whole pot had to be carefully washed out. (I have the same model that I use now that I got at a church sale for $2) . This was one of my first crockpot recipes and I haven't made it in years. However, many times I substituted peach jam for the apricot jam, and in my mind our Russian dressing was not orange but much redder--kind of like Kraft Catalina. Anyway, I'm going to put this on my list of dinners to make again. I've been married more than 55 years, so this had to be from the early 70s. THANKS for sharing.

Corn tortillas prep Mandy: lighty fry the tortillas in oil, just to moisten, NOT to crisp... maybe 10 sec total for each tortilla. After lightly frying, drain on paper towels.... no more fall apart! ❤

Corn tortillas can be fragile, especially when filled with ingredients. Using two tortillas helps prevent tearing and makes it easier to hold the taco without spilling the filling.

For the Russian apricot chicken, I've been making that for years and I've never used additional oil or msg. I just mix the onion soup mix, apricot preserves, Russian dressing, and pour it over the chicken. I've also used Catalina dressing in lieu of Russian, and cranberry in lieu of apricot preserves. No matter what, it always turns out delicious.

Fry your corn tortillas in oil in a small pan. A few seconds on each side. When you pull them out, use a folded paper towel to get most of the excess of oil off. Awesome for any taco!
@tracisperry78743 ай бұрын
I heat oil in a skillet, cook the tortillas in the hot oil about 5-10 seconds a side, then lay them on paper towels to drain any excess oil. They are soft, not hard. This is the way I grew up having corn tortillas. Another way is to spray your skillet with PAM and cook each side for about 5-10 seconds. When I do this for carnitas we double tortilla them as you did. Hope that helps. Love these recipes! Thank you!

San Diego taco expert here. Tortillas- you have to toast them on the stove, either right on the burner or on a pan. They should be a little charred. Also- try putting some oil in a pan, dipping your tortillas in the meat juice. Fry in both side, add cheese ands beef to half of the tortilla, fold over the other half, and crisp up on both sides. Should also be a bit charged, and Ooey gooey melty inside. Like a quesadilla but better. QuesaTACO.

Hi! New subscriber from down south of Texas! I come from a Mexican home/heritage and the way to soften corn tortillas is we heat some vegetable Oil or whichever you prefer, we heat it real good on low, then submerge your corn tortilla in the oil for a few seconds. Take the tortilla out and place it on a paper towel to get all that oil off. Be careful not to tear your tortilla because it will be super soft. I use tongs to get it in and out. Be careful not to overcook in the oil them because it will get crispy like tostadas! With the right pan, right temp, you can soften about 10 corn tortillas in 2 mins! We do the same when we make enchiladas. Goodluck. Thanks for sharing recipes, definitely going to try some!

I know this is going to sound really weird, but you made it possible. You might not even realize you've done it. On your "My Kitchen Cheat Sheet" you have conversions for Slow Cooker to Instant Pot times. I'm looking at it right now. If it takes 10 hours on low in the slow cooker, it's 40 mintues in the Instant Pot. All I'm saying is that if you have a spouse like mine, that can't figure out what they want for dinner, and it turns out to be that Loaded Potato Soup (4 hours on high), for instance, the Instant Pot conversion tells me 18 minutes on high pressure. Granted, I'd probably miss out on the amazing scents around the house, but my wife is in a HUGE hurry most days. If I can whip up a really good soup in under an hour, that hasn't come out of a can, I consider that a win. Short times are sometimes the only times I have to feed her. She's a nurse, and would probably eat a ham sandwich off the bottom of a flip flop, as long as it was quick. I'd rather she didn't. Those short times are because she's on 12 hour shifts, and has to get food, and get to bed quickly, so she can get up at 4:30 am to do it all over again. Also, most of these are packable lunches. So that, too, is a win.

Hey Mandy you might already know this tip by now, for soft corn tortillas, I wet and ring out one or two paper towels and fully wrap a stack of tortillas. Place them in the microwave for about one minute turning after 30 seconds. The steaming effect softens them makes them very pliable and you enjoy warm soft corn tortillas that are not dry and crumbly. I stack two for my tacos for reinforcement. I also Steam my flour tortillas. Definitely gonna try those sliders though Yum!

MSG is perfectly safe. It is often used as an alternative to salt, since it has one third less sodium than regular table salt. And glutamate occurs naturally in foods like tomatoes, almonds, clams, Parmesan cheese, mushrooms, scallops, and anchovies. MSG boosts the meaty flavor, or umami, of the dishes it is added to. The only people who need to avoid MSG are people who are allergic to glutamates.
