There is a German restaurant we eat at occasionally in New York, and on their appetizer list they have a plate of 5 or 6 mixed sausages. The wild boar sausage is definitely the best one, although they are all good. Their sauerkraut is made in house and is fantastic too! Just a hint of sweetness and sauer.

When a boy in 1950s Sheboygan Wisconsin, we had small neighborhood grocery stores each of which had their own little meat market!! Most of these made their own Bratwurst and some their own Summer Sausage!! With time most faded away except the really good ones!! Today Johnsonville out in Sheboygan County makes a great Brat widely distributed for grilling!! High fat content which serves well on a hot charcoal grill. Johnsonville also makes the best hot dog you have ever had but not widely distributed!! In Sheboygan my Grandfather Wagners neighborhood market was the last enterprise standing. They moved just outside of town in a huge facility and make the brats you would dream of!! in cure meats competition in Minneapolis, they have taken many Number Ones sometimes losing out to a Lancaster County Pennsyvania Amish Sausage Maker!! Miesfelds also makes a great Garlic Summer Sausage!! God Speed!!

I was in the Army in early 90's in Baumholder and in that region maybe due to large amount of American's serving there most places broke bratwurst into 2 types. Wiesswurst and rotewurst. First I guess was similar to Frankfurt style (pork & veal)and 2nd was more like a smoked ham type sausage. I had brats in Mannheim and Frankfurt also and the white brats seemed vey similar. I think I had more coarse ground ones in Bavaria. P.S. most American bratwursts tend to be coarse ground, more spiced, and 100% pork, and generally setup for outdoor grilling. Also Brats are most predominant in Michigan, Wisconsin, Minnesota, Ohio, and Illinois. I am from Michigan and a lot of your commenters are from Wisconsin by the looks of it. If you are in America never get a "stadium style" brat as it is basically a hot dog.

Because I have both smoked my own, but can purchase them from my butcher in Crivitz Wisconsin (Pelkins). They are rich, moist, and delicious. We are all very proud of our Wisconsin brats! I also make my own bratwurst. It took ten years to get the receipt correct. I have been told the are very good. I will give away one ingredient the rest goes to my son's.., nutmeg.

The only thing that I understood is that I am wrong. I don't think I want to understand the rest though. But if it's constructive, please write in German:)
