Hi Miwa! I just bought all 3 of your E-cookbooks this week. Last night I put my konbu and shiitake in to soak for today! I'm trying the basic Miso soup and the Eggplant onigiri from your vegan cookbook first. I'm not a good cook, so I'm starting easy!

Hi, Miwa's cookbook are great and easy to follow. I started with them 2 years ago and then joined her Ikigai Cooking Club. If you have time to participate, it' s a great way to learn to cook Japanese meals. There are also live zoom classes, so much fun, and lots of individual support.

6:11 Tackling health concerns is an on going journey. There is so much we don't know. There is too much for 1 person to learn. Any effort is commendable and something to be proud of. I worked with 100% dependent autistic children and their families. Those parents are not worrying about the potential health concerns of processed foods. They just want food and water in children. Anytime we can get food in our children is a victory. Don't listen to people who cannot appreciate your videos for what they are; sharing your culture with us. I've learned a lot from your videos. I appreciate every single one.

This is exactly what I am looking for, my health started to decline and I know my diet is to blame most foods I am no longer able to eat, but I do understand the Japanese diet is much cleaner and easier on my guy so I have been looking for ways to start eating this way.

I also just purchased some beautiful Japanese dishes and im gonna learn how to eat and cook with chop sticks! I also got a Japanese sitting table too! And cozy cushions. I'm a a very big girl and eating this way has greatly improved my energy and helped my period cramps. Decaf green tea and milk chocolate is my favorite snack in moderation of course! Also I'm starting to crave way less sugar ! I'm also vegetarian though I don't purchase milk and eggs, I do eat thme if they are in chocolate though. Many thanks !!

I can't live without miso, absolutely love the taste. Another thing I always have to have at home is umeo vinegar, first I tasted it, I didn't like it, but now I use it all the time. Luckily we have a lot of asian markets in Prague so I can find a lot of interesting food and ingredients. Lately I tried natto, I love the taste, but that slimy texture was too much for me 😅

My very favourite soy sauce is Ohsawa Nama Shoyu. It’s so good! And Kuze Fuku and Sons makes a very good dashi bag. For Mirin, Eden is a good choice for people not in Japan. Lot of their products are actually made in Japan but very accessible in the states. Thanks for the informative video!

Let me see if I can guess: shoyu, mirin, sake, miso, kombu, and katsuobushi would I think be the top 6, but there are by no means sufficient on their own. You will also need rice vinegar and toasted sesame oil, at the very least.

Hey! I love your videos! I have a question regarding Kombu stock. I read that it contains lots od Iodine, much more than the max daily amount. How can I use kombu stock and reduce the amount of iodine to make sure I don't exceed it?

Thank you for your comment! In Japan, the recommended daily intake of iodine for adults is approximately 130 μg, with the tolerable upper intake level set at 3,000 μg. Since kombu (kelp) is very rich in iodine, here are some points to consider: - **5g of dried kombu** typically contains around 2,000-3,000 μg of iodine. - When used for simmered dishes or soups, the iodine content is reduced as only the extract is consumed. Using about 1-2g of kombu in these cases is generally considered safe. - It’s also worth noting that kombu is not consumed daily; it’s typically used only a few times a week at most. That said, this is just my personal perspective. Please consult with your doctor to ensure it suits your individual health needs!^^
