I have two of those kinds of worms, also the gas bubbles aren’t especially an issue. Especially with those worms. The one on the right is a flatworm, not parasitic planaria, but closely related to it. It’s a détritivore, and the thin one on the left is a detritus worm. Entirely harmless, your guppies will eat them if they get into the water line. It’s an ecosystem at work!

The bubbles are mostly CO2 It is temporary as bacteria decompose fresh substrate organic matter. Eventually, it will slow down. Be glad: your plants are getting free CO2! Make sure that your fish are breathing normally (early morning) and getting enough oxygen. If not, increase aeration. The bubbling also benefits by stirring up the substrate and introducing oxygen-containing water

So I guess my fish are getting a little extra carbonated water, huh?

I agree with this. The gas is very likely CO2. This is normal and not dangerous as it's not a 24/7 continual release that would largely affect the water column. You might see a bubble once or twice a day in the beginning and it will dissipate over time. Burping your aquarium just helps this happen faster. Your tank looks well on the way to becoming settled. The thing with natural or Walstad method is people can be impatient and just want everything settled quickly. You will discover worms and snails and all sorts of microbes over time. Don't lose sleep over any of it. They help break everything down further. Nature will work at its own pace regardless as to your expectations. Let it run its course.

Buchepalandra, anubias, fern, etc. I think they basically will grow without substrate, you can just tied them up onto some wood/rocks

It's totally normal! Let your aquarium do it's thing. You should be happy about it, it's going mature. Meaning more healthy, more balanced and way less prone to a tank crash. Nothing will get hurt from it. Your tank is strong and well done. Your plants know what they are doing. Do not touch a thing, "helping" nature does not help at all.

If your plants decide to need more fertilizer they will grow in the Potting soil, everything is fine. 👍 An Ecosystem couldn´t work without bacteria and worms, so everything is fine ;). But i have no Knowledge about planaria worms, so i can´t help you there.🧐 Normally you should remove the bigger organic parts from the potting soil before filling it in, but the bacterias and worms will eat that things too, and built more fertilizer, it seems that your experiment works fine. kzbin.info/www/bejne/qaeopZSFZ86pqqc Thats my "Walstad light" experiment it is running for about 9months and the fish are doing sooo much babies. I have taken nearly 1 inch soil from my backyard and covered it with 1,5 inch mixed old sand. I´m using a small pump with a big "sponge" HMF in the left corner and low budget light on it, i think my plants could need more light. :(

If you have bubbles it means the bottom has gone anoxic(no or very little oxygen) and is releasing nitrogen gas, there is a type of bacteria that turns no2 back into N2 under anoxic conditions. The N2 gas is harmless if you have surface agitation. If you don't high N2 content will give your fish gas bubble disease. A build up can erupt and disturb your substrate and release NO2 which is harmful for your fish, This is the flaw to the walstad method where it creates an anoxic condition if your soil bed is too deep and you don't have plants with deep roots like cryptocoryne, Amazon sword or tiger lily to tap into the lower sections. In nature this condition happens in swampy areas with a lot of silt or clay and ground water can't flow through and transport oxygen. Then you get the swamp gas smell. The worms don't look like planaria but a ciliated species similar to marine bristle worm, and the other one is a rhabdocoela. Planaria have a distinct arrowhead shape. They actually help turn the soil bed like an earthworm and will eat dying or rotten roots. Malaysia trumpet snails or fresh water clams/mussels(if you can feed them) can help in your case because they burrow and will turn soil. So will a few khuli loach(these eat baby shrimp). Consider adding a plenum to your future walstad tanks and get some way to move water through the bottom to prevent anoxic conditions. I cut strips of filter sponges and put them on the edge of mine with a plenum so water can flow through to the bottom; basically a modified undergravel filter but I can use soil instead of gravel

what about adding volcanic stones or dust in the bottom of substrate in your new tank, does it helps eliminate anoxic gases?
