A brad leone and Devonn “it’s alive” needs to happen seems like a really good contrasting relationship also the way devonn asks brads questions seems like he’s happy to learn aswell … love it

Devonn seems like he would do an it's alive series with Brad around toasted rice paired with pickled (insert x vegetable), and maybe a universal sweet sauce. Or sauce pairings matched to the veg! A full on how to create "your own" better takeout. Blanched asparagus tips, sauteed thai chilis and onions in takeout packet seasoning, seasoned rice (some crunch!), and crispy lamb shawarma. Sprinkle with toasted sesame and spritz of lime. Serve on a candy necklace

I used to watch this channel religiously. Now I find it just not interesting. The only thing going for it is Brad and Chris. Really happy Carla and Molly have their own channels now.

What Brad is describing with the wok and throwing the food up in the air is called “wok hay” which means the energy or breath of a wok, and it describes a certain flavor when authentic stir frying is done.

Brad just brings out the party with most of the other hosts. He and Devonn were great together because he also has a big personality, they should do more videos together. I also love Chris and Brad together too.

Regarding Zaynab's nonstick pan, I was curious how the pan was made without PTFE so I did some digging. "The 3-layer DuraSlide granite nonstick coating is 40 times more durable than traditional PTFE coatings" but they're careful not to say it doesn't have PTFE at all. Doing some research it looks like the company that makes DuraSlide describes it as "combining a specially applied thermal sprayed metal or ceramic with one of many PTFE-type materials." I'd put money on the fact that the pan actually uses PTFE. Luckily, Teflon/PTFE is considered safe as long as it's not heated to extreme temperatures, but it's worth calling it out since Zwilling seems to be very deliberate in their marketing of the product.

The one problem is the risk of chipping. You spend up to a few hundred and then it gets chipped. Carbon and cast iron are cheaper, cook as well, and are lower risk. And if you botch the seasoning or allow it to rust, it's recoverable. BTW, the best ever is silver. Cost a king's ransom though. You may get lucky at an estate sale and find a pan that was misidentified as stainless steel.

It's the same as cast iron except the outside. NEVER soak a cast iron pan it ruins the seasoning after a few hours. Self-cleaning oven helps to remove the old seasoning.

I feel like a lot of the newer video hosts have been pretty great. I’ll watch anything with DeVonn or Kendra, Brad is still great, and I don’t really think anyone is all that difficult to watch

Please be aware that most nonstick pans that are marketed as being PTFE-free and environmentally friendly are just as harmful as actual PTFE nonstick pans, as it's (the PTFE) been replaced by GenX (and/or similar chemicals) which is pretty much just as bad... I have stopped using nonstick pans completely and will never buy another! It's an outrage that similar materials are still mass produced as the damage to the environment (by both the materials themselves and the subsequent waste production during manufacture) is pretty much irreversible and the long term risks of human and animal exposure to these materials and their byproducts are likely to be catastrophic...

Ceramic is non-stick. They're expensive and you have to be careful with them, but they've been used safely in cooking for centuries. Not quite as slick as Teflon, but still very good. The whole PTFE stigma will never go away in many minds, no matter how many studies show the modern versions are safe when not abused. Kind of like the whole GMO paranoia. YMMV.

I have the last cast iron skillet and oh my i get the best crispy dosa on it. Just comes out so perfect🥰 Also great for parathas, tawa bhaji, potato tikkis, basically goes perfect with Indian Street food cuisine

I don't know about pans, but my favorite pot is a very vintage aluminum Wear Ever I got at a garage sale for like $2 in the early 90s. It's my rice pot, my pasta pot, my heat up soup pot, my everything pot really. I find myself reaching for it over and over and over on almost a daily basis

I feel oddly vindicated to share two favorite pans with the hosts. Ines and I share a favorite pan, for the same reasons! I have a near identical cast iron griddle pan to hers and everything good she said is 100% true. I use it several times a week. My little 6" cast iron skillet like Kendra's is a close second, it's such a perfect pan for every day cooking.

I think in terms of cooking (besides baking) the wok is really *the* multipurpose tool. It can be used to deep fry, sear meat, stir fry, boil soups, cover it up to use as a smoker or even become a steamer if you throw on a bamboo steamer on top of water in the wok.

I use a wok for just about everything. Shape uses less oil and there is just enough surface at the bottom that you can still make things like burger patties or steaks for a single or two people. Easily my go to and do it all pan.

I’d love to hear what you use your for. I’m usually cooking for two and make enough for another day, so 4 portions. I can’t imagine cooking anything in such a small pan. Maybe some sweet treats like they mentioned, but no meals

would've been unnecessary. there are only a few categories (cast iron, carbon steel, non-stick, other) and the "rules" for them are well-known and easy to find

My Mum bought me a great pan a few years ago. It's like a deep sided frying pan, very heavy. Circulon brand I think.

Cast Iron: Lasts forever, can do anything, can handle anything, and nothing sticks to it if it's seasoned. Over the years all other pans have died and never been replaced. Cast iron on the other hand multiplies as I use it for everything: two large pans, one small pan, a griddle, and a dutch oven.

I own the Le Creuset Enameled Cast Iron Pan. Eggs will stick! If you have a medium low heat, enough fat/oil and you are scrambling the eggs or (you have medium high heat and you are making egg fried rice) it is OK. But it is not in the same league as seasoned cast iron or non stick pans in the eggs department. For everything else it is at par or better than regular cast iron. As it should - it costs 3-6 times more (if you find it on sale it is 3-4 time the price of regular cast iron)

Don’t know who did the research on Zwilling’s Madura pans, but they are PFOA-free not PTFE-free. Only Zwilling’s ceramic nonstick styles are PFOA- and PTFE-free. And like is typically recommended for any PTFE coated cookware Zwilling explicitly cautions against exposing the pan to higher temps.
