I think it's in terms of pour-overs, it's because she's using pour-overs with metal filters. Pour-overs with paper filters are typically light bodied and tea-like due to how the coffee oils are being absorbed by the paper filters. This is especially true with chemex paper filters due to how thick they are. Pour overs with a metal filter and even with a french press will give you a heavy bodied coffees with a thicker mouth feel due to the coffee oils getting into your cup, grittier too because of the fine coffee particles finding it's way to your cup as well. Nothing wrong with light bodied and heavy bodied coffees, it's just a matter of preference. That, and she just eyeballs everything, Lol.

30 grams coffee. 450mg of water input out put of brew is 380-400mg if coffee. Wet paper filter on the hario v60 along side with the serving carafe dump water out. 90grams of water pour 45 second wait. 2nd pour 90 grams 45 seconds wait (repeat 3 more times until 5th pour adding 90 grams of water per pour and water input is 450 grams) 5th pour wait until it's done dripping. Add 50 grams of water into the brewed coffee to dilute the strength.

In case anyone was wondering, when Claire mentioned a temperature where "it's hot but you can gulp it", i find that between 120-130 Fahrenheit or 49-54 Celsius. 120 is very warm but can be gulped fast, 130 requires you to slurp the drink slower so you don't burn your mouth but is definitely do-able
