Nice dry aging with the UMAi, I’ll be cutting into my first UMAi 33 day dry aged USDA Prime ribeye next week. like you, it’s been the longest month ever waiting in excitement to see how it turns out. It’s a shame however after you cut such thick beautiful steaks only to serve them up really thin sliced. That’s not necessary with such a wonderful and tender piece of meat and you miss out on some of the additional mouth feel and texture by not having a larger bite.

FCT70 Nice, I have another 18lb Prime ribeye in the fridge as well dry aging that’s a bit over a week in. When done I’ll be cooking some up on the charcoal bbq. Yum!

Can you wrap it a thin piece of fat or a cheap meat before dry aging? So, the outside turns to pellicle. Saving some of the meat?

When you put this in the fridge do you have to do anything particular to make sure air is circulating or will any normal fridge work?

A normal fridge will work! You just have to make sure you have the proper bags! Also keep the temp of the fridge between 34 and 37 degrees. You also want to put it on a rack or some sort to get airflow underneath

Honestly I would say 35 to 40 Is more than enough. At 60 I feel that you get more loss, with not a big change in the flavor profile.

hi... i have the same vac machine but it keeps ruining the umai bags so is there a way to avoid ruining the umai dry bags bearing in mind i used 1 vac mouse

I did have that problem once. You want to make sure you are only using the “moist” setting if you’re actually getting liquid out. I’ve upgraded to a food saver since this video. (20x better) I would suggest you do the same
